    Mid-exponential phase Saccharomyces rouxii YSa40 cells subsequently stressed at low aw/pH in the 0.64 aw/pH 3.5 glycerol/CPB system became injured. Such injury was detected by the loss of ability of the
    stressed population to form colonies on secondary-stress plating medium (glycerol/BM agar at 0.94 aw
    /pH 3.5 (lactic acid)) while colony forming ability on secondary non-stress plating medium (sugars/BM agar at 0.94 aw/pH 3.5 (lactic) was unaffected. The injury was shown to be due to sensitivity to glycerol/lactic acid. Results of the present study will be useful for achieving complete decontamination of ‘Intermediate Moisture Foods’ against xerotolerant molds and yeast.

    The spray-dried Vernonia amygdalina water extract was evaluated for antidiabetic effect using normoglycaemic, glucose induced hyperglycaemic and streptozotocin induced diabetic mice. This effect was compared with an oral dose of Momordica charantia. Besides, acute toxicity of the extract was also evaluated at concentration 2000 and 5000 mg/kg body weight. The extract was able to reduce blood glucose level in glucose and streptozotocin induced hyperglycaemic mice without causing hypoglycemic effect on fasting normoglycaemic mice. Moreover, mice appeared to be normal and no mortality was observed in the acute toxicity study after treated with up to 5000mg/kg of extract. These results indicated that the spray-dried Vernonia amygdalina water extract was a potential antidiabetic agent which does not induce hypoglycemic and acute toxicity on normal subject.

    A study was carried out to compare the composition and thermal profiles of the fat component of six brands of commercial biscuits (BA, BB, BC, BD, BE & BF) with those of lard and palm oil. Extraction of fat from biscuit samples was done using petroleum ether according to the soxhlet extraction procedure. The isolated fat samples along with lard and palm oil were analyzed using gas liquid chromatography (GLC), reversed-phase high performance liquid chromatography (RP-HPLC), and differential scanning calorimetry (DSC). According to GLC analysis, palm oil, lard and all six biscuit brands had either palmitic or oleic acid as major fatty acids. Sn-2 positional analysis of fatty acids showed that oleic (> 60%) as the most dominant fatty acid of palm oil and biscuit brands BA, BB, BC, and BD while palmitic (> 60%) as the most dominant fatty acid of lard and biscuit brands BE and BF. RP-HPLC analysis showed that the triacylglycerol (TAG) profiles of lard and biscuit brands BE and BF were closely similar while those of brands BA, BB, BC, and BD and palm oil were similar. DSC analysis showed that the cooling and heating profiles of lard and brands BE and BF were similar, while those of palm oil and brands BA, BB, BC, and BD were similar. Hence, this study concluded that biscuit brands BE and BF are not suitable for consumers whose religious restriction prohibit the use of lard as food ingredient.

    Synthetic antioxidants are added to food in the powdered form to preserve it. However these compounds posed serious health concern since they have been associated with causing cancer. Thus using fresh herbs with antioxidant activities would be good alternative. The objectives of this study were to evaluate and compare the total phenolic contents and antioxidant activities of both powdered and fresh forms of turmeric leaf, pandan leaf and torch ginger flower. Total phenolic content (TPC) was assayed based on the redox reaction between Folin-Ciocalteu with phenolics in the sample extracts. Antioxidant activity (AA) was assayed using the ß-carotene linoleate model system and the percentage of antioxidant activity was calculated from the values of degradation rate. Scavenging activity (SA) was assayed using the DPPH radical scavenging model system whereby EC50 value was determined from the plotted graph of scavenging activity against the concentration of sample extracts. Analyses revealed that powdered forms of turmeric leaf, pandan leaf and torch ginger flower had higher TPC (2013.09 ± 5.13, 1784.25 ± 7.59 and 1937.42 ± 6.61 mg GAE/100g, respectively) than their respective fresh forms (348.75 ± 1.26, 356.42 ± 1.32 and 211.59 ± 6.29 mg GAE/100g, respectively). Similarly, powdered forms of turmeric leaf, pandan leaf and torch ginger flower possessed better AA (64.31 ± 0.99, 65.09 ± 0.74 and 11.80 ± 0.40 %, respectively) than their respective fresh forms (24.93 ± 0.71, 16.91 ± 0.70 and 1.45 ± 0.10 %, respectively). Powdered forms of turmeric leaf, pandan leaf and torch ginger flower were also better radical scavenger as compared to their respective fresh forms. In conclusion, all samples in their powdered forms have high total phenolic contents, antioxidant and scavenging activities than their respective fresh forms.

    Practiced as folk medicine since ancient times, bilimbi (Averrhoa bilimbi) is commonly
    consumed and widely cultivated in Malaysia. In search for naturally occurring anticancer
    agents, a potential fruit extract was found to exert anticancer properties in vitro without any
    cytotoxic effect on normal cells. This study investigated the anti-proliferative effect and
    underlying cell death pathway induced by bilimbi ethanolic extract on human non-hormonedependent
    breast cancer cell line, MDA-MB-231. Anticancer potential of bilimbi extract was
    conducted by investigating the in vitro growth inhibitory effect, DNA fragmentation, cell cycle
    progression and anti-proliferation assay. Release of caspases, cytochrome c and apoptotic
    proteins were demonstrated to determine the mechanism of cell death pathway. Findings
    revealed that bilimbi inhibited growth of MDA-MB-231 cells through the induction of
    apoptosis mediated by cell cycle arrest at G0/G1 checkpoint. Released of cytochrome c coupled
    with up-regulation of caspase-3/7, caspase-9 and Bax pro-apoptotic proteins in addition to
    down-regulation of dysfunctional p53 and Bcl-2 anti-apoptotic proteins implied that bilimbi
    induced a p53-independent mitochondrial apoptosis pathway in MDA-MB-231. These results
    suggest that bilimbi could induce tumor cell anti-proliferation through apoptosis. As a natural
    product, bilimbi could be a promising anticancer agent and an inexpensive approach to cancer
    chemoprevention strategy.

    The use of component from Ganoderma lucidum as prebiotic source is interesting as the G. lucidum itself was known for more than a decade in the traditional Chinese medicine. In this work, Ganoderma lucidum crude polysaccharides (GLCP) and Polysaccharide-fraction number 2 (PF-2) were used as carbon sources in the fermentation with Bifidobacterium sp. The results showed the potential of prebiotic effect of the G. lucidum extract in batch-culture fermentation based on increment in the growth of bacteria used (0.4 – 1.5 log10 CFU/mL) after 18h fermentation. Fermentation was further done using faecal materials as bacterial inocula and bacterial growth changes were examined using real-time PCR. The results showed the ability of GLCP and PF-2 to support the growth of Bifidobacterium genus with 0.3 and 0.7 log10 cells/ml increased, respectively. Interestingly, Lactobacillus which is known as beneficial bacterial genus also showed growth increment with 0.7 and 1 log10 cells/ml increased. The competition for carbon sources thus inhibits the growth of potentially harmful genus, Salmonella (0.3 and 0.5 log10 cells/ml) in comparison to the control.

    Proximate composition and amino acid content of red seaweeds, Kappaphycus alvarezii, from
    Langkawi and Sabah in Malaysia were determined in order to evaluate their potential nutritional
    value. The crude fibre content of seaweed from Sabah (at 8.95%) was found to be significantly
    higher than that of Langkawi (at 7.86%) (P0.05). Total
    17 amino acids were found in both seaweeds, aspartic acid, gulamic acid, leucine are the major
    constituent and followed by. This study showed that Kappaphycus alvarezii from both habitats
    contained different amount of some of the essential amino acid and proximate composition it
    can be used as ingredients to improving nutritive value in human diets.

    All living organisms including human beings in this biosphere are constantly exposed to a variety of xenobiotics. The enormous chemical load in the environment has been primarily through the modernization, industrialization and changes in lifestyle. The changing food habits to suit modern living pose a serious threat to a healthy life. Among others, consumption of soft drinks invariably forms a part of modern life. Mostly children and adolescents are the target groups vulnerable to frequent consumption, compromising the nutritious foods such as fruits, vegetables, milk and milk products. Logically, the quality of the soft drinks is determined by the type and quantity of chemicals present, including those present inherently in the water used for such preparations. The impact of soft drinks on human health has been a subject of in depth research. Consumption of soft drinks plays a major role in a variety of diseases like obesity, diabetes, dental and bone disorders and others, more so among children and adolescents. The toxic effects of soft drinks have gained much attention, due to the frequent scientific reports and media attention. The objective of this review is to provide a comprehensive scrutiny of the impact of soft drinks on health, as well as to suggest alternatives for a healthy life style.

    This study investigated the effects of different percentages of ethanol (0 - 100%), extraction times (1 - 5 h) and temperatures (25 - 60°C) on total phenolic content (TPC) and antioxidant activity (AA) of sapodilla pulp and peel. TPC was determined by Folin-Ciocalteu reagent method, while AA was evaluated using 2,2-diphenyl-1-picrylhydrazyl (DPPH) radical scavenging assay, 2,2-azino-bis-(3-ethyl-benzothiazoline-6-sulfonic acid) (ABTS) radical scavenging assay, ferric reducing antioxidant power (FRAP) assay and β-carotene bleaching (BCB) assay. Based on the optimal extraction conditions used, sapodilla pulp extract had TPC of 3.89 mg GAE/g, 63.20% of DPPH scavenging activity, 4.30% of ABTS scavenging activity, 19.17% of BCB activity, and FRAP value of 15.24 mg TE/g; while its peel extract had TPC of 9.23 mg GAE/g, 92.95% of DPPH scavenging activity, 5.36% of ABTS scavenging activity, 8.14% of BCB activity, and 27.85 mg TE/g (FRAP value). Using the optimal extraction conditions for sapodilla pulp (40% ethanol as extraction solvent that extracted at 60°C for 4 h) and sapodilla peel (80% ethanol and 2 h extraction time at 40°C), highest antioxidants can be extracted from the pulp and peel.

    Pectin and modified pectin differ in the structure of the chains in which the modified version of pectin is shorter in length, non-branched, and galactose-rich. These differences in structure may be exploited for the removal of heavy metals. Durian (Durio zibethinus) rind, that is regarded as agri-food waste was processed into durian rind pectin (DRP) and modified durian rind pectin (mDRP). DRP and mDRP were evaluated as biosorbent for removal of toxic heavy metals (Pb(II), Cd(II), Cu(II), Zn(II) and Ni(II)) and were compared with two commercial products; citrus pectin (CP) and modified citrus pectin (MCP). In general, the order of removal of heavy metals by all biosorbents was Cu(II) > Pb(II) > Ni(II) > Zn > Cd(II). Except for the removal of Pb(II), the order of effectiveness of heavy metal removal of the biosorbents was MCP > mDRP > CP > DRP. MCP, a commercial biosorbent showed the best biosorbent ability, and mDRP a waste product from durian was also a favorable sorber that should be considered for sorption and removal of heavy metals.

    A total of 112 burger patties (35 beef burger patties, 39 chicken burger patties and 38 fish burger patties) which are commercially available at retail level were investigated for the presence and number of Listeria monocytogenes. These samples were analyzed using MPN-PCR method and conventional culturing methods. L. monocytogenes was detected in 33.3% of chicken burger patties, 22.9% of beef patties, and 10.5% of fish patty samples. From all contaminated raw burger patties, the estimated count of L. monocytogenes was ranged from 3 to 75 MPN/g. The results suggest that burger act as a potential source of listeriosis if the contaminated burger patty is consumed without adequate cooking. The risk associated with consumption of these samples was found to be high particularly for processed food at retail level in Malaysia. Therefore, food manufacturers play an important role in monitoring the manufacturing process and conduct a periodical surveillance on microbiological quality assessment on the processing plants. Besides, there is a need to increase awareness of consumers and food handlers to practice proper cooking of the burger patties before the point of consumption, to reduce the risk of listeria infection.

    Multitude of factors such as concern for use of growth hormones, chemical additives in feed,
    animal welfare, human health issues and environmental impacts have led to the steady increase
    in the consumption of organic meat worldwide. The purpose of the study was to investigate
    the factors that influence the purchase intention towards organic meat based on the Theory of
    Planned Behavior (TPB) and organic meat choice motives. The influence of attitude, subjective
    norm, perceived behavioral control, safety, meat characteristic, health concern and price on the
    intention to purchase organic meat was analyzed. The study utilized cross-sectional research
    design using survey method. A total of 400 consumers responded to the survey using mallintercept,
    with both genders equally represented and had an average age of 35 years. Results
    showed that the respondents seemed to be very concern about food safety (m=4.06) and meat
    characteristics (m=4.04) as compared to health (m=3.70) and price (m=3.36) was not a strong
    motivating factor (m=3.35). The level of attitude towards organic meat, subjective norm
    and perceived behavioral control was at moderate level. The findings showed that perceived
    behavioral control and personal norm towards organic meat of TPB and price and meat
    characteristic of the choice motives could explain 66.4 percent of the variance in the intention
    to purchase organic meat. As intention to purchase is an important indicator of future organic
    meat consumption, policy makers and marketers may draw on these results when attempting to
    promote and enhance acceptance of organic meat among the consumers.

    Edible bird nests (EBNs) are highly demanded globally. The industry was recently affected by an import ban to China due to high nitrite levels.Subsequently, many concerns have been raised. In this study, the microbial composition of both raw and commercial EBNs was investigated. The raw EBNs were purchased from swiftlet farms: Kuala Sanglang (Perlis), Pantai Remis (Perak), Kluang (Johor), Kajang (Selangor) and Kota Bharu (Kelantan). The commercial nests were purchased from five different Chinese traditional medicinal shops (Companies A-E) in Malaysia and one from Indonesia (Medan). A total of 123 and 34 isolates were successfully identified from unboiled raw and commercial EBNs respectively. The highest average CFU (1.77 x 104) was associated with raw EBNs obtained from Kluang, while for the commercial EBNs, those obtained from Company M1 had the highest CFU (5.50 x 104). Bacillus sp. accounted for the highest isolated species from both unboiled raw and commercial EBNs. Bacillus sp. and Brevibacillus sp. were mainly isolated from the boiled EBNs. Bacillus spp. were the dominant bacterial groups in all the raw EBNs except for those obtained from Kajang. The average number of bacteria isolated from the raw EBNs (average = 7) was higher compared with those isolated from the commercial EBNs (average = 4). The highest average number of bacterial isolates was reported in the raw EBNs obtained from Kota Bharu. Among the commercial EBNs, one EBN sample each from Companies A and M1 showed the highest number of isolates (n = 10). In general, there was a significant reduction in the number of bacteria isolated after boiling the EBNs. Raw EBNs obtained from Kajang had a distinct pool of bacterial species where the majority of the isolated species belonged to Staphylococcus species. The associated health impacts of these microorganisms to the consumers and public need to be addressed.

    Microwave heating technology is widely used in food catering and domestic households. Nonuniformity of microwave temperature distribution causes the formation of hot and cold spots in heated product has led to the survival of foodborne pathogens which may later cause food borne diseases. It is the aim of this study to determine the effect of different microwave heating on the microbiological quality of microwavable frozen chicken curries. Nine commercialised frozen chicken curries were thawed overnight in the chiller (< 4°C) and exposed to different microwave power levels and times (270 W at 60 s; 950 W at 150 s and 300 s). 25 g of chicken curry were homogenised, serial diluted and enumerated aseptically. Total Aerobic Count (TAC), Total Coliform Count (TCC), Escherichia coli count and Salmonella count were carried out and no microorganisms were detected. Enterobacteriaceae were found in the food samples after enrichment process. Polymerase Chain Reaction (PCR) amplification and 16S ribosomal ribonucleic acid (rRNA) sequencing were carried out. Results of 16S rRNA sequence analysis indicated that two gram-negative isolates after enrichment were identified as Klebsiella pneumoniae.

    The present work was undertaken to investigate the effect of different packaging materials, namely polyethylene terephthalate (PET) and aluminium laminated polyethylene (ALP) on the physicochemical properties and microbiological stability of spray-dried honey jackfruit powder over seven weeks of storage at 38 ± 2°C and 90% relative humidity. The moisture content of honey jackfruit powder packaged in PET was doubled (12.32%) than of those packaged in ALP (5.31%). The water activity (aw) of the powders were lower than 0.6 for both packaging materials, thus considered shelf-stable. Hygroscopicity increased up to 42.44 and 39.84% for powder packaged in PET and ALP, respectively. The angle of repose for powders flowability increased to 19° (ALP) and 28° (PET), which indicated that the powders flowabili- ty significantly decreased upon storage. The degree of caking for powder packaged in ALP (43.69%) was much less severe than that of PET (84.51%). Powder packaged in ALP showed good solubility (81.07 - 99.01%) and satisfactory microbiological results (< log 2.58 CFU/g). The results recommended that ALP packaging was better suited for keeping spray-dried honey jackfruit powder.

    The inhibitory effect of onion extract on cassava leaf polyphenol oxidase was investigated. The polyphenol oxidase from cassava leaves was strongly inhibited by various anti-browning agents such as L-ascorbic acid and L-cysteine. The percentage of inhibition increased with the increased of anti-browning agents concentrations. The addition of heated onion extract exhibited a stronger inhibitory effect on cassava leaf polyphenol oxidase than the fresh onion extract. The highest percentage of inhibition was exhibited with heated onion extract in the presence of glucose and glycine, which was 87.18%. The onion extract inhibited the cassava leaf polyphenol oxidase non-competitively.

    Polyphenol oxidase (PPO) was extracted from lotus (Nelumbo nucifera) root and partially
    purified up to 11.51× with a 43.6% yield using aqueous two-phase separation system. The
    optimum pH was at 8.0 for both substrates; 4-methylcatechol and pyrogallol. PPO activities
    were maximally achieved at 50°C for pyrogallol, and 20°C for 4-methylcatechol. 84% and 71%
    loss of relative PPO activities were obtained for pyrogallol and 4-methylcatechol, respectively
    following heat inactivation at 90°C for 40 min. Inactivation rate constant (k) values ranged
    between 0.88 × 10-2 min-1 to 2.97 × 10-2 min-1 for pyrogallol, and 0.69 × 10-2 min-1 to 2.44 × 10-2min-1 for 4-methylcatechol. The activation energy (Ea) were 75.32 kJ mol-1 and 73.14 kJ mol-1
    for pyrogallol and 4-methylcatechol, respectively. PPO activity was strongly inhibited (> 79%)
    by ascorbic acid. SDS exhibited the greatest efficiency in activating lotus root PPO.
