    Extruded plant proteins, also known as textured vegetable proteins (TVPs), serve as vital components in plant-based meat analogue, yet their structural and nutritional characteristics remain elusive. In this study, we examined the impact of high-moisture (HM) and low-moisture (LM) extrusion on the structures, digestion and absorption of three types of plant proteins. Extrusion transformed plant proteins from spherical to fibrous forms, and formed larger aggregate particles. It also led to the disruption of original disulfide bonds and hydrophobic interactions within protein molecules, and the formation of new cross-links. Intriguingly, compared to native plant proteins, TVPs' α-helix/β-sheet values decreased from 0.68 to 0.69 to 0.56-0.65. Extrusion increased the proportion of peptides shorter than 1 kD in digesta of TVPs by 1.44-23.63%. In comparison to unextruded plant proteins, TVPs exhibited lower content of free amino acids in cell transport products. Our findings demonstrated that extrusion can modify protein secondary structure by diminishing the α-helix/β-sheet value, and impact protein tertiary structure by reducing disulfide bonds and hydrophobic interactions, promoting the digestion and absorption of plant proteins. These insights offer valuable scientific backing for the utilization of extruded plant-based proteins, bolstering their role in enhancing the palatability and nutritional profile of plant-based meat substitutes.

    A new series of 2,4,6-trihydroxy-3-geranyl-acetophenone (tHGA) analogues were synthesized and evaluated for their lipoxygenase (LOX) inhibitory activity. Prenylated analogues 4a⁻g (half maximal inhibitory concentration (IC50) values ranging from 35 μ M to 95 μ M) did not exhibit better inhibitory activity than tHGA (3a) (IC50 value: 23.6 μ M) due to the reduction in hydrophobic interaction when the alkyl chain length was reduced. One geranylated analogue, 3d, with an IC50 value of 15.3 μ M, exhibited better LOX inhibitory activity when compared to tHGA (3a), which was in agreement with our previous findings. Kinetics study showed that the most active analogue (3e) and tHGA (3a) acted as competitive inhibitors. The combination of in silico approaches of molecular docking and molecular dynamic simulation revealed that the lipophilic nature of these analogues further enhanced the LOX inhibitory activity. Based on absorption, distribution, metabolism, excretion, and toxicity (ADMET) and toxicity prediction by komputer assisted technology (TOPKAT) analyses, all geranylated analogues (3a⁻g) showed no hepatotoxicity effect and were biodegradable, which indicated that they could be potentially safe drugs for treating inflammation.

    Genistein, daidzein, glycitein and quercetin are flavonoids present in soybean and other vegetables in high amounts. These flavonoids can be metabolically converted to more active forms, which may react with guanine in the DNA to form complexes and can lead to DNA depurination. We assumed two ultimate carcinogen forms of each of these flavonoids, diol epoxide form and diketone form. Density functional theory (DFT) and Hartree-Fock (HF) methods were used to study the reaction thermodynamics between active forms of flavonoids and DNA guanine. Solvent reaction field method of Tomasi and co-workers and the Langevin dipoles method of Florian and Warshel were used to calculate the hydration free energies. Activation free energy for each reaction was estimated using the linear free energy relation. Our calculations show that diol epoxide forms of flavonoids are more reactive than the corresponding diketone forms and are hence more likely flavonoid ultimate carcinogens. Genistein, daidzein and glycitein show comparable reactivity while quercetin is less reactive toward DNA.

    Genetic diversity is important for crop improvement. An experiment was conducted during 2011 to study genetic variability, character association, and genetic diversity among 27 soybean mutants and four mother genotypes. Analysis of variance revealed significant differences among the mutants and mothers for nine morphological traits. Eighteen mutants performed superiorly to their mothers in respect to seed yield and some morphological traits including yield attributes. Narrow differences between phenotypic and genotypic coefficients of variation (PCV and GCV) for most of the characters revealed less environmental influence on their expression. High values of heritability and genetic advance with high GCV for branch number, plant height, pod number, and seed weight can be considered as favorable attributes for soybean improvement through phenotypic selection and high expected genetic gain can be achieved. Pod and seed number and maturity period appeared to be the first order traits for higher yield and priority should be given in selection due to their strong associations and high magnitudes of direct effects on yield. Cluster analysis grouped 31 genotypes into five groups at the coefficient value of 235. The mutants/genotypes from cluster I and cluster II could be used for hybridization program with the mutants of clusters IV and V in order to develop high yielding mutant-derived soybean varieties for further improvement.

    Estimating balanced nutrient requirements for soybean (Glycine max [L.] Merr) in China is essential for identifying optimal fertilizer application regimes to increase soybean yield and nutrient use efficiency. We collected datasets from field experiments in major soybean planting regions of China between 2001 and 2015 to assess the relationship between soybean seed yield and nutrient uptake, and to estimate nitrogen (N), phosphorus (P), and potassium (K) requirements for a target yield of soybean using the quantitative evaluation of the fertility of tropical soils (QUEFTS) model. The QUEFTS model predicted a linear-parabolic-plateau curve for the balanced nutrient uptake with a target yield increased from 3.0 to 6.0 t ha-1 and the linear part was continuing until the yield reached about 60-70% of the potential yield. To produce 1000 kg seed of soybean in China, 55.4 kg N, 7.9 kg P, and 20.1 kg K (N:P:K = 7:1:2.5) were required in the above-ground parts, and the corresponding internal efficiencies (IE, kg seed yield per kg nutrient uptake) were 18.1, 126.6, and 49.8 kg seed per kg N, P, and K, respectively. The QUEFTS model also simulated that a balanced N, P, and K removal by seed which were 48.3, 5.9, and 12.2 kg per 1000 kg seed, respectively, accounting for 87.1%, 74.1%, and 60.8% of the total above-ground parts, respectively. These results were conducive to make fertilizer recommendations that improve the seed yield of soybean and avoid excessive or deficient nutrient supplies. Field validation indicated that the QUEFTS model could be used to estimate nutrient requirements which help develop fertilizer recommendations for soybean.

    An innovative approach using soybean residues for the production of bioflocculants through solid-state fermentation was carried out in 4.5 L near-to-adiabatic bioreactors at pilot-scale level. An added inoculum of the strain Bacillus subtilis UPMB13 was tested in comparison with control reactors without any inoculation after the thermophilic phase of the fermentation. The flocculating performances of the extracted bioflocculants were tested on kaolin suspensions, and crude bioflocculants were obtained from 20 g of fermented substrate through ethanol precipitation. The production of bioflocculants was observed to be higher during the death phase of microbial growth. The bioflocculants were observed to be granular in nature and consisted of hydroxyl, carboxyl and methoxyl groups that aid in their flocculating performance. The results show the vast potential of the idea of using wastes to produce bioactive materials that can replace the current dependence on chemicals, for future prospect in water treatment applications.

    An experiment was conducted to investigate the effect of replacing soybean meal with soya waste at different levels on intake, digestibility and growth in goats. Eighteen male goat kids with initial body weight (BW) of 13.0 kg were distributed equally to three dietary groups. They were fed Napier grass (Pennisetum purpureum) and concentrate mixture, and each goat was assigned to an individual pen. Soybean meal in the concentrate mixture was replaced with soya waste at 0% (T1), 50% (T2) and 100% (T3) levels in respective dietary groups. These diets were isocaloric and isonitrogenous. Results showed that animals fed T3 diet exhibited higher Napier grass intake than those fed T1 or T2 diet. There was no influence on total intakes of dry matter (DM), organic matter (OM), crude protein (CP), metabolic BW, per cent BW and metabolisable energy by the dietary groups. However, there was an increasing trend on intake and digestibility of neutral detergent fibre (NDF) with increasing levels of soya waste in the diets. Animals fed T3 diet showed higher intake and digestibility of NDF than those fed T1 diet. There was no influence of the dietary groups on digestibilities of DM, OM and CP. Similarly, there was no effect of them on the final BW, total BW gain, daily BW gain, feed conversion ratio and feed cost. Soya waste can replace 100% soybean meal in diets for growing goats, because no change was observed in nutrient intake, digestibility and growth performance; inclusion of soya waste enhanced the intake and digestibility of NDF.

    Fermented soybean meal (FSM), which has lower anti-nutritional factors and higher active enzyme, probiotic and oligosaccharide contents than its unfermented form, has been reported to improve the feeding value of soybean meal, and hence, the growth performance of piglets. However, whether FSM can affect the bacterial and metabolites in the large intestine of piglets remains unknown. This study supplemented wet-FSM (WFSM) or dry-FSM (DFSM) (5% dry matter basis) in the diet of piglets and investigated its effects on carbon and nitrogen metabolism in the piglets' large intestines. A total of 75 41-day-old Duroc×Landrace×Yorkshire piglets with an initial BW of 13.14±0.22 kg were used in a 4-week feeding trial. Our results showed that the average daily gain of piglets in the WFSM and DFSM groups increased by 27.08% and 14.58% and that the feed conversion ratio improved by 18.18% and 7.27%, respectively, compared with the control group. Data from the prediction gene function of Phylogenetic Investigation of Communities by Reconstruction of Unobserved States (PICRUSt) based on 16S ribosomal RNA (rRNA) sequencing showed that carbohydrate metabolism function families in the WFSM and DFSM groups increased by 3.46% and 2.68% and that the amino acid metabolism function families decreased by 1.74% and 0.82%, respectively, compared with the control group. These results were consistent with those of other metabolism studies, which showed that dietary supplementation with WFSM and DFSM increased the level of carbohydrate-related metabolites (e.g. 4-aminobutanoate, 5-aminopentanoate, lactic acid, mannitol, threitol and β-alanine) and decreased the levels of those related to protein catabolism (e.g. 1,3-diaminopropane, creatine, glycine and inosine). In conclusion, supplementation with the two forms of FSM improved growth performance, increased metabolites of carbohydrate and reduced metabolites of protein in the large intestine of piglets, and WFSM exhibited a stronger effect than DFSM.

    Background: Obesity is a complex and multifactorial disease that is strongly associated with multiple comorbidities and mortality. Weight reduction in overweight and obese patients was highly desired to minimize future complications. Meal replacement is emerging as one of the effective tools to promote weight loss. Isoflavones and soy protein present in soybean are able to promote weight loss and alleviate obesity. Aim: Our systematic review aims to investigate the weight loss effect of soy-based meal replacement among the overweight and obese population. Methods: We will conduct a systematic review of RCTs that evaluated the effect of a soy-based meal replacement on weight loss in overweight and obese patients. The primary outcome of this review is weight loss. Besides that, we will assess BMI, body fat, waist circumference and hip circumference as the secondary outcome. We will search PubMed and the Cochrane Central Register of Controlled Trials (CENTRAL) in the Cochrane Library. Two reviewers will independently screen titles and abstracts, review full texts, extract information and assess the risk of bias of individual studies. We will conduct meta-analyses using a random-effect model if sufficient data are available. If meta-analysis is not performed, we will present a systematic qualitative synthesis. Summary: This systematic review will identify the weight loss effect of soy-based meal replacement among the overweight and obese adult population. We expect the result may strengthen the evidence on the role of soy-based meal replacement in optimal body weight management.

    Soybean milk is a rich plant-based source of protein, and phenolic compounds. This study compared the nutritional value of soybean milk, flour, soy protein isolate (SPI) and evaluated the impact of prepared vitamin E/calcium salt/soy protein isolate nanoparticles (ECSPI-NPs) on fortification of developed soybean milk formulations. Results indicated that soybean flour protein content was 40.50 g/100 g, that fulfills 81% of the daily requirement (DV%), the unsaturated fatty acids (USFs), oleic and linoleic content was 21.98 and 56.7%, respectively, of total fatty acids content. In soybean milk, essential amino acids, threonine, leucine, lysine achieved 92.70, 90.81, 77.42% of amino acid scores (AAS) requirement values respectively. Ferulic acid was the main phenolic compound in soybean flour, milk and SPI (508.74, 13.28, 491.78 µg/g). Due to the moisture content of soybean milk (88.50%) against (7.10%) in soybean flour, the latest showed higher nutrients concentrations. The prepared calcium (20 mM/10 g SPI) and vitamin E (100 mg/g SPI) nanoparticles (ECSPI-NPs) exhibited that they were effectively synthesized under transmission electron microscope (TEM), stability in the zeta sizer analysis and safety up to IC50 value (202 ug/mL) on vero cell line. ECSPI-NPs fortification (NECM) enhanced significantly phenolic content (149.49 mg/mL), taste (6.10), texture (6.70) and consumer overall acceptance (6.54). Obtained results encourage the application of the prepared ECSPI-NPs for further functional foods applications.

    The black soldier fly larvae (BSFL) have been widely extolled for the application in managing various solid organic wastes. Owing to the saprophagous nature of BSFL, a rapid valorization of solid organic wastes can be accomplished with the simultaneous production of valuable biochemical compounds derived from larval biomass. In the present works, the mixed waste coconut endosperm (w-CE) and soybean curd residue (SC-r) substrates with increasing protein nutritional constituent were administered to BSFL. The correlations between protein from larval feed substrates and nutritional profiles of BSFL biomasses were ultimately unveiled. The protein from larval feed substrates could be increased by increasing of SC-r portion against w-CE. At the w-CE:SC-r ratio of 3:2, the highest larval total weight gained and growth rate were attained; indicating an optimum protein nutritional constituent in mixed organics (12.4%) that could enhance the BSFL palatability. Further increment of protein nutritional constituent in mixed organics was found acidifying the residual larval feed substrate progressively, undermining the growth of BSFL. By feeding the BSFL with optimum mixed organics, the maximum accumulations of larval lipid and protein could be achieved. Transesterification of extracted lipid had demonstrated high in monounsaturated fatty acids (73%) which was suitable for biodiesel. The BSFL palatability was finally confirmed from the bioconversion viewpoint of mixed organic wastes. Again, achieving the highest bioconversion efficiency of 14% into larval biomass after accounting the metabolic loss of 54%. Therefore, a total of 68% of mixed w-CE and SC-r could be successfully bioconverted.

    Makanan berasaskan kacang soya terkenal di Asia sejak beribu tahun dahulu dan ia tidak hanya diiktiraf sebagai makanan tradisi tetapi mempunyai potensi untuk kesihatan. Kajian ini dijalankan untuk menentukan penerimaan, kesukaan dan kadar penggunaan produk soya dalam kalangan pengguna di Semenanjung Malaysia. Seramai 330 responden telah terlibat dalam kajian ini. Mereka terdiri daripada pelajar universiti dan masyarakat umum yang berumur 18 tahun ke atas. Setiap responden diminta untuk mengisi borang soal selidik dengan seliaan penyelidik. Kajian menunjukkan bahawa 56% responden lebih menyukai susu soya berbanding dengan produk soya yang lain seperti taufufa (16%), kicap (9%), tempeh (8%), tauhu telur (7%) dan tauhu soya (4%). Sebahagian besar responden (>50%) percaya produk soya boleh mengurangkan risiko kanser dan osteoporosis. Sebanyak 89.4% responden makan tauhu soya. Sementara itu, 63.9% responden makan tauhu telur dan 42.2% suka tauhu telur yang digoreng. Lebih daripada 80% responden meminati warna, aroma, rasa dan tekstur tauhu telur.

    A sustainable supply of plant protein is critical for future generations and needs to be achieved while reducing green house gas emissions from agriculture and increasing agricultural resilience in the face of climate volatility. Agricultural diversification with more nutrient-rich and stress tolerant crops could provide the solution. However, this is often hampered by the limited availability of genomic resources and the lack of understanding of the genetic structure of breeding germplasm and the inheritance of important traits. One such crop with potential is winged bean (Psophocarpus tetragonolobus), a high seed protein tropical legume which has been termed 'the soybean for the tropics'. Here, we present a chromosome level winged bean genome assembly, an investigation of the genetic diversity of 130 worldwide accessions, together with two linked genetic maps and a trait QTL analysis (and expression studies) for regions of the genome with desirable ideotype traits for breeding, namely architecture, protein content and phytonutrients.

    Despite considerable research in advanced countries on public perceptions of and attitudes to modern biotechnology, limited effort has been geared towards developing a structural model of public attitudes to modern biotechnology. The purpose of this paper is to identify the relevant factors influencing public attitudes towards genetically modified (GM) soybean, and to analyze the relationship between all the attitudinal factors. A survey was carried out on 1,017 respondents from various stakeholder groups in the Klang Valley region. Results of the survey have confirmed that attitudes towards complex issues such as biotechnology should be seen as a multifaceted process. The most important factors predicting support for GM soybean are the specific application-linked perceptions about the benefits, acceptance of risk and moral concern while risk and familiarity are significant predictors of benefit and risk acceptance. Attitudes towards GM soybean are also predicted by several general classes of attitude.

    Year by year, huge quantities of by-products are generated during the manufacturing process of soybean-based products. Okara is one of the by-products, and it is an insoluble portion of the soybean. It consists of high moisture (8.4-22.9%); on dry matter basis, it contains high metabolizable energy (9.0-14.2 MJ/kg) and other components that include crude protein (20.9-39.1%), crude fiber (12.2-61.3%), crude fat (4.9-21.5%), and ash (3.4-5.3%). Fermentation of okara improves its nutritional quality and reduces its anti-nutrient contents. Due to animals' palatability, okara can be used to replace the soybean meal/concentrate feed partially or completely in ruminant's diet and partially in nonruminant's diet. Okara feeding does not depress the intake, digestibility, growth, milk production, blood metabolic profiles, and meat quality of animals. However, this by-product decays quickly due to its high moisture content, and its heavy weight and sticky nature make it difficult to process and expensive to dry using conventional methods. This paper thoroughly summarizes the utilization of okara as animal feed in the cause of developing a general guideline with favorable levels of inclusion in the diets of animals for its exploitation and valorization. This review will encourage further research to develop eco-friendly and value added feed for animals.

    A series of heteroatom-containing porous carbons with high surface area and hierarchical porosity were successfully prepared by hydrothermal, chemical activation, and carbonization processes from soybean residues. The initial concentration of soybean residues has a significant impact on the textural and surface functional properties of the obtained biomass-derived porous carbons (BDPCs). SRAC5 sample with a BET surface area of 1945 m2 g-1 and a wide micro/mesopore size distribution, nitrogen content of 3.8 at %, and oxygen content of 15.8 at % presents the best electrochemical performance, reaching 489 F g-1 at 1 A g-1 in 6 M LiNO3 aqueous solution. A solid-state symmetric supercapacitor (SSC) device delivers a specific capacitance of 123 F g-1 at 1 A g-1 and a high energy density of 68.2 Wh kg-1 at a power density of 1 kW kg-1 with a wide voltage window of 2.0 V and maintains good cycling stability of 89.9% capacitance retention at 2A g-1 (over 5000 cycles). The outstanding electrochemical performances are ascribed to the synergistic effects of the high specific surface area, appropriate pore distribution, favorable heteroatom functional groups, and suitable electrolyte, which facilitates electrical double-layer and pseudocapacitive mechanisms for power and energy storage, respectively.

    Kajian ini dijalankan untuk menentukan kesan perencatan fi tat terhadap bioavailabiliti kalsium (Ca), ferum (Fe) dan zink (Zn) dalam produk kacang soya tempatan terpilih. Fitat menyebabkan kesan perencatan terhadap penyerapan mineral seperti Ca, Fe dan Zn dengan membentuk kompleks yang tidak larut dan tidak dapat dicernakan. Kesan perencatan fi tat terhadap bioavailabiliti mineral seperti Ca, Fe dan Zn telah dianggarkan dengan nisbah molar fi tat kepada mineral. Kandungan fi tat ditentukan dengan menggunakan kaedah pertukaran anion dan kandungan mineral ditentukan dengan Spektrofotometer Serapan Atom (AAS). Produk kacang soya dibeli dari pasar malam dan gerai makanan yang terletak di Cheras dan Sri Rampai, Kuala Lumpur. Setiap sampel yang dibeli dari kedua- dua lokasi dianalisis secara duplikat. Kajian ini mendapati kek soya dan kesemua masakan yang mengandungi tempe tidak mempunyai kandungan fi tat. Ini mungkin disebabkan oleh kehadiran R. oligosporus yang menghasilkan fi tase lalu menghidrolisiskan kandungan fi tat semasa proses fermentasi tempe. Terdapat lima jenis sampel makanan yang mempunyai nisbah molar fi tat/Ca > 0.24, sepuluh jenis sampel makanan dengan nisbah molar fi tat/ Fe > 1, lapan jenis sampel makanan mempunyai nisbah molar fi tat/ Zn > 15 dan satu jenis sampel makanan mempunyai nisbah molar [fi tat x Ca]/ Zn > 200. Keputusan nisbah molar fi tat/ mineral dari kajian ini menganggarkan bioavailabiliti Ca, Fe dan Zn yang rendah. Kesimpulannya, kek soya dan masakan mengandungi tempe mempunyai bioavailabiliti mineral yang tinggi manakala tau-hoo pok bakar mempunyai bioavailabiliti mineral yang rendah.

    The experiment was conducted to determine the feed intake and body weight (BW) change of Boer goats supplemented with a commercial concentrate pellet and combinations of concentrate and soya waste. Twelve male goats were divided into three groups. Each group was randomly allocated to each of the three treatment diets: Napier grass (Pennisetum purpureum) ad libitum and concentrate pellet at rate of 2.0% of BW, daily (T1); Napier grass ad libitum and concentrate pellet at rate of 1.4% of BW and soya waste at rate of 0.5% of BW, daily (T2) and Napier grass ad libitum and concentrate pellet at rate of 0.9% of BW and soya waste at rate of 0.5% of BW, daily (T3). The results indicated that supplementation of concentrate pellet together with soya waste (T2 or T3) significantly (p<0.05) decreased intakes of grass dry matter (DM), total DM and total crude protein compared to the solely concentrate pellet group (T1). However, BW gain was significantly (p<0.05) higher in T2 treatment compared with the T1 or T3 treatments. Supplementation of concentrate pellet with soya waste (T2 or T3) significantly (p<0.05) improved the feed conversion efficiency and reduced the feed cost of goats compared with solely concentrate pellet group (T1). The results indicated that grass intake and feed cost can be reduced by replacing concentrate pellet with soya waste in the diet of goats where soya waste is available.
