    Chicken breast muscle powder (CBMP) was treated as a function of heating temperature, heating time and amount of alkali added. The pre-treated CBMP was then blended with modified waxy corn starch (MWCS) and characterized by flow analysis and temperature sweep.     L-arginine is an amino acid, which serves as the sole substrate for nitric oxide (NO) synthesis with the concomitant formation of L-citrulline in biologic system. NO has been demonstrated to be involved in smooth muscle relaxation and vasodilation, immune regulation and neurotransmission. It also has an important function as both intercellular and intracellular signals in many physiological systems, including the reproductive system where NO mediates penis erection. This study was undertaken to determine the effects of L-arginine on sperm motility, sperm count, and the nitric oxide level in the seminal plasma. Twelve sexually matured male rabbits (Oryctolagus cuniculus) were randomly divided into four groups with three rabbits each, which were control, low, medium, and high concentration groups. The treatment groups were force-fed with 100mg/kg, 200mg/kg, and 300mg/kg body weight of L-arginine for four weeks, whereas the control group was force-fed with water. Semen samples were collected every three days alternatively for a week before starting treatment and then after four weeks of treatment. Pre-treatment and post-treatment results were compared. Semen samples were collected using artificial vaginas from each group for sperm analysis such as sperm motility, sperm count and NO level in seminal plasma. Sperm motility and sperm count were analysed manually under microscope (twenty power objective), using a Makler counting chamber.     In this study, acid-thinned starch was blended with konjac glucomannan or psyllium husk powder at a concentration of 3% w/w (starch basis). The blends were characterized by pasting analysis and rheological
    properties evaluation. Jelly candy was made from the blends and textural characteristics were studied. Pasting analysis showed that both gums were found to significantly increase some of the pasting parameters, such as peak viscosity, trough, breakdown, final viscosity and setback values. From the frequency sweep, it was found that addition of konjac glucomanan or psyllium husk powder increased the storage modulus (G’) and loss modulus (G’’) values, with psyllium added sample showing more prominent effect than konjac added ones, when compared to the control samples. All samples were found to demonstrate thixotropic flow behaviour. Jelly candy texture profile analysis revealed that konjac glucomannan or psyllium husk powder addition, although decreasing chewability, but rendered the jelly candy less sticky.

    The effects of food gums addition on wheat dough freeze-thaw and frozen storage stability were studied. Thermal and dynamic mechanical properties of frozen wheat dough without yeast addition were
    determined by means of Differential Scanning Calorimetry (DSC) and Dynamic Mechanical Analysis (DMA).
    DSC results revealed that food gums showed the ability to increase freeze-thaw stability in frozen-stored
    samples wherein lower difference in melting enthalpy between first and second freeze-thaw cycle was shown. Based on DMA results, in general, difference between Tg’ and storage temperature (- 18°C) of dough became smaller upon addition of food gums. This may have a practical implication whereby the unfrozen phase could be better protected against physical degradation.

    Konjac glucomannan (KGM) was treated with or without sonication and/or hydrochloric acid (HCl).
    Hydrolysis effects on KGM were studied for properties such as degree of hydrolysis, fluidity, molecular mass, and creep properties. The degree of hydrolysis for sonicated KGM and acid treated KGM were not significantly different. However, the combination treatment of acid hydrolysis and sonication was found effective in yielding a smaller molecular weight fraction of KGM and solution with higher fluidity. From the creep analysis, KGM treated with combination treatment exhibited the highest compliance among samples tested. In general, ultrasound mediated acid hydrolysis was found to be a promising technique in degrading high molecular weight biopolymer. This could be attributed to a localized high temperature and high shear forces generated during cavitation that facilitated the endothermic acid hydrolysis.
