This study is carried out to determine the physical properties of green pepper berries and to
improve the existing retting technique in white pepper production using the Viscozyme and
Celluclast as the enzymes. Effects of blanched and non-blanched pepper berries, acidic solution
and non-acidic solution, and different temperature of 28, 35, 42, and 49°C are determined to
obtain the optimum conditions for enzymatic retting. The physical properties of green pepper
berries such as dimension (5.21 mm), weight (0.11 g per berry), true density (1319.33 kg/m3),
bulk density (596.9 kg/m3), sphericity (0.976), angle of repose (6.87°) and flow ability with
funnel flow time of 5.27 seconds were determined. The enzymatic retting in 42oC can fully
soften the pericarp of pepper berries from 15 days to 7 days. The enzymatic decortication has
the efficiency in acidic solution (pH 4) and temperature of 42°C with non-blanched pepper
berries. The enzymatic retting reached constant fracture force (20.98N) at the ninth soaking
days while the non-enzymatic retting reached constant fracture force (21.89N) at the fifteenth
    soaking days.

Background : Anemia in pregnancy is a worldwide problem. Ministry of Health Malaysia has conducted prophylaxis program to distribute hematinic pills to pregnant women since 3 decades ago.
Methodology : A cross sectional study was conducted among pregnant women who attended government health clinics in Johor Bahru district to assess the prevalence of taking iron tablet and factors associated with it by using a structured questionnaire.
Result : Prevalence of respondents taking ferrous pill daily was 68.6%. Anemia prevalence found in this study was 37.5%. Majority of the respondents did not take pills regularly said their reason as forgotten(54.0%), side effects caused by taking pill (39.3%) and did not like the taste (6.7%). The haemoglobin mean was directly inclined with frequency of ferrous pill intake. The significant associated factor in taking iron pill was only frequency of drinking tea. Multivariate logistic regression analyses revealed that drinking tea was the only factor that contributing to iron pills consumption.
Conclusion : Education is the most important factor in improving adherence to iron pill. Besides that, motivation and behaviour modification of pregnant women also needs to be taken into account.

Introduction: Pre-pregnancy care is an important strategy in prevention of adverse maternal and fetal health as well as continuity of good child care. In multi-ethnicity country such as Malaysia there are many cultural, religion and beliefs related to certain life stages.
Methodology: A cross sectional study was conducted among the Indian ethnic group to assess the prevalence and factors associated with pre-pregnancy care. A study was conducted in Taman Manickavasangam Hulu Langat Selangor among the age group of 18-45 year old women.
Result: There were 90 respondents participated in self administered questionnaires. There were 65 respondents (72.2%) married, 24 (26.7%) single and one widow (1.1%). Using a scoring method of analysis (high and low) showed that 55 (61.1%) have high score in knowledge on pre-pregnancy care. The prevalence of pre-pregnancy care practice showed that 63 (70%) scored as high practice. Using correlation analysis showed that there was a significant association between the practice score and increasing age (P=0.03). However, only history of previous pregnancy showed a significant association with the pre-pregnancy care practice and no association found between the practice and knowledge score.
Conclusion: Prepregnancy care helps in screening risk factors of women before conception. This will help in prevention of adverse effect on maternal and foetal. Giving awareness on the importance of having prepregnancy care screening may help women to continue practicing good antenatal care.

Knowledge of physical characteristics of Malaysian variety pomelo fruits are necessary for the design of some post harvesting, processing systems such as cleaning, handling, grading and packaging system. For proper development of pomelo grading systems, important relationships between the mass and some physical characteristics of pomelo fruits such as length, width, thickness, surface area, projected areas and volumes must be known. The aim of this research was to measure physical characteristics of two Malaysian varieties of pomelo fruit; Ledang (PO55) and Tambun (PO52) varieties. In this study, the mass of pomelo fruit was evaluated and correlated to measure physical characteristics using Linear, Quadratic, S-curve and Power models. The results showed that the correlation of the mass of pomelo fruit with all measured physical characteristics was significant at the 0.01 probability level. In the nutshell, mass modeling of pomelo fruit for Ledang (PO55) and Tambun (PO52) varieties based on the projected area are recommended according to economical view.

Consumers today prefer to purchase ready-to-eat, fresh-cut fruit that is readily available at the markets and retailers. They generally select the fresh-cut fruit base on the quality, freshness, nutrition and safety. The effects of packaging condition on fresh-cut Cantaloupe were studied during 18 days of storage at 2°C and 87% RH. Fresh-cut Cantaloupe pieces were packed in a Polypropylene (PP) container. As a control, the container was cover with lid without film, while Sample 1 (S1) was sealed only by a 40 μm PP film and Sample 2 (S2) was sealed with a 40 μm PP film and then adding the lid cover. Changes in colour, firmness Total Soluble Solids (TSS), pH, Titratable Acidity (TA) and Total Plate Count (TPC) were evaluated over time. During storage, it was found that the firmness significantly decreased from day 0 until day in all packaging conditions. Color parameters Luminosity (L*) and Chromaticity (C) were significantly change at the significance level of 95% (p

The effect of storage time on the quality of ultraviolet-irradiated and thermally pasteurised pineapple juice was evaluated. The juices were irradiated with ultraviolet light (UV-C) at wavelength 254 nm (53.42 mJ/cm2, 4.918 s), thermally pasteurised at 800C for 10 minutes and stored at 40C for 13 weeks. There were significant changes in the total soluble solids, pH, titratable acidity and turbidity of UV-irradiated juice during storage, whereas for the same quality attributes of thermally pasteurised juice remained stable throughout the storage time. There were no significant changes in total phenolics for both treatments throughout the storage period. Other quality parameters (ascorbic acid, colour L, hue angle and chroma) were significantly affected by the storage time. Regarding the microbiological analysis, the total plate counts and yeast and mould counts of the UV-irradiated juice increased gradually throughout the 13 weeks of storage while these parameters remained unchanged in the thermally pasteurised juice with almost no microorganism growth. UV-irradiated pineapple juice preserved better quality attributes (TSS, pH, titratable acidity, ascorbic acid, turbidity, total phenolic, L (lightness), hue angle and chroma) than the thermal pasteurised juice during the storage time. Hence, UV irradiation has great potential as an alternative technology to thermal pasteurisation in producing products of high nutritive values.
