    Legume is a plant in the family of Fabacae or Leguminosae that rich in protein, carbohydrate, dietary fibre, and minerals. Germination of legume causes some important changes in the biochemical and a nutritional characteristic of the legumes that may be beneficial to human’s health and nutritional status. This study was carried out to determine the effect of germination on total phenolic, tannin and phytic acid contents of soy beans and peanut. The process of germination was carried out by soaking legumes in water for 6 hours, followed by germinating them in wet muslin cloth for 48 hours.     This study is carried out to determine the physical properties of green pepper berries and to
    improve the existing retting technique in white pepper production using the Viscozyme and
    Celluclast as the enzymes. Effects of blanched and non-blanched pepper berries, acidic solution
    and non-acidic solution, and different temperature of 28, 35, 42, and 49°C are determined to
    obtain the optimum conditions for enzymatic retting. The physical properties of green pepper
    berries such as dimension (5.21 mm), weight (0.11 g per berry), true density (1319.33 kg/m3),
    bulk density (596.9 kg/m3), sphericity (0.976), angle of repose (6.87°) and flow ability with
    funnel flow time of 5.27 seconds were determined. The enzymatic retting in 42oC can fully
    soften the pericarp of pepper berries from 15 days to 7 days. The enzymatic decortication has
    the efficiency in acidic solution (pH 4) and temperature of 42°C with non-blanched pepper
    berries. The enzymatic retting reached constant fracture force (20.98N) at the ninth soaking
    days while the non-enzymatic retting reached constant fracture force (21.89N) at the fifteenth
    soaking days.

    Date palm is an important plant in arid regions with more than 20 varieties reported all over the world. Date seed is a byproduct of date fruit industry which is normally being discarded, used as animal feed ingredient or turned into non-caffeinated coffee by the Arabs. About 11-18% of date fruit weight is the seed which is composed of carbohydrates, dietary fiber, fat, ash and protein. In addition, the antioxidant content in date seed oil (DSO) was found to be comparable with olive oil, which can be as a good source of antioxidant in order to fulfill the consumers demand. Oleic acid is the major fatty acid found in DSO, followed by lauric, linoleic, palmitic and myristic acid. However, different varieties of date fruits have different fatty acid compositions. This paper reviewed the potential use of date seed and date seed oil in order to discover and develop its usage and find out the suitable application of these seed and oil.

    The main approach of this study is to develop high fiber bread by utilizing the cocoa-by products, namely cocoa pod husk which is incorporated into whole meal bread. The cocoa pod husk can be classified as one of the source of high fiber. The cocoa pod husk was dried and milled in order to produce the cocoa pod husk powder (CPHP). There were five different percentages of CPHP level incorporated into the high fiber bread which were formulation A (0% CPHP), formulation B (5% CPHP), formulation C (10% CPHP), formulation D (15% CPHP) and formulation E (20% CPHP). All of the samples undergone physical analysis and sensory evaluation. The incorporation of CPHP give significant effects towards bread volume and hardness attribute where the bread became denser and harder in texture as compared to the control. The color of bread crumb and crust was also changed to darker color. For the overall acceptance, formulation B has the highest mean score among the composite breads (formulation B to E) studied.

    In the present study, six different rice varieties marketed in Penang, Malaysia (locally grown and imported) were evaluated for proximate composition, physiochemical properties and cooking qualities. Overall, 'Black rice' variety had the highest protein content (8.16%) with lowest fat content (0.07%). Between the various rice varieties investigated, thousand kernel weight varied between 16.97-19.43 g, length/breadth (l/b) ratio was between 2.09-3.75, while bulk density varied between 0.81-0.86 g/ml. Amylose content was highest (27.71%) in white rice (local, medium grain type) with lowest recorded for brown rice variety (3.36%). Results on minimum cooking time showed it to range between 10 to 31.67 minutes with the brown rice cooking the slowest. The water uptake ratio ranged between 2.33 to 3.95 and was low in glutinous rice (2.33), while gruel solid loss (range from 3.17 to 6.43) was lowest in Basmati rice variety (3.17%). The minimum cooking time was found to be negatively correlated with amylose content (r = -0.97). A positive correlation was recorded for both amylose content and l/b ratio in relation to elongation of cooked rice. These results highlight cooking and physiochemical properties of rice to be strongly dependent on their amylose content. Results generated in this study might be able to provide vital information's on identifying 'superior quality of rice' marketed in Penang, based on their proximate composition as well as on their physiochemical and cooking properties.

    Nutritional fact study has prime importance to make the species edible and commercially viable to the food consumers. The proximate chemical composition and amino acid profile of Gelidium pusillum were studied to understand the nutritional status. The red seaweed Gelidium pusillum was rich in dietary fibre (24.74 ± 1.05%), lipid (2.16 ± 0.61%) and ash content (21.15 ± 0.74%). The mean protein content (11.31 ± 1.02% DW) was within the range of 10-47% for green and red seaweeds and this range was higher than Gracilaria cornea (5.47% DW), Gracilaria changgi (6.90% DW) and Eucheuma cottonii (9.76% DW). Gelidium pusillum was found to contained all the essential amino acids, which accounted for 52.08% of the total amino acids. Tyrosine (26.2 mg g-1 protein), methionine (15.8 mg g-1 protein) and Lysine (48.3 mg g-1 protein) were the limiting amino acid of Gelidium pusillum. However, the levels of other essential amino acids were above the FAO/WHO requirement pattern (EAA score ranged from 1.14 to 1.62). Aspartic and glutamic acids constituted a substantial amount of the total amino acids (24.68% of total amino acid). The result from this study suggested that Gelidium pusillum could be utilized as a healthy food item for human consumption.

    Evaluation on the physicochemical and sensory properties of wheat flour doughnuts substituted with banana flour (BF) was investigated. Wheat flour was substituted with green banana (Musa paradisiaca var. Awak) flour at 0% (control), 10%, 20% and 30% levels in yeast-raised doughnut prepared by the straight dough method. Chemical (moisture, fat, protein, ash, carbohydrate, crude fibre, total dietary fibre and caloric content), physical (volume, specific volume and colour) and sensory evaluation were conducted on all samples. Chemical analyses result indicated a higher percentage of total dietary fibre and caloric content in doughnut substituted with BF than the control. Colour evaluation showed that the dough, crust and crumb of doughnut with BF ranged from 68.97 ± 0.59 – 84.78 ± 0.16 (red – yellow quadrant). The change from light to darker colour correlated with the amount of BF added. Results also showed that the volume and specific volume was significantly affected (p < 0.05) by levels of BF substituted. Doughnut substituted with 20% BF showed the highest score in overall acceptability (6.71 ± 1.40).

    This study was carried out to determine the proximate, functional and pasting properties of breadfruit starch. Breadfruit starch was isolated from matured breadfruit (Artocarpus altilis) and was analyzed for its fuctional, proximate and pasting properties. The starch contains 10.83%, 0.53%, 0.39%, 22.52%, 77.48% and 1.77% moisture, crude protein, fat, amylose, amylopectin and ash contents respectively. The average particle size, pH, bulk density and dispersibility of the breadfruit starch were 18 μm, 6.5, 0.673 g/mls, and 40.67% respectively. The swelling power of the breadfruit starch increases with increase in temperature, but there was a rapid increase in the swelling power from 70 to 80 0C. The pasting temperature of the starch paste was 84.05 0C, setback and breakdown values were 40.08 and 7.92 RVU respectively. The peak viscosity value was 121.25 RVU while final viscosity value was 153.42 RVU. This study concluded that breadfruit starch has an array of functional, pasting and proximate properties that can facilitate its use in so many areas where the properties of other starches are acceptable.

    Pitaya peel (Hylocereus polyrhizus), which consists approximately 22% of the whole fruit weight, is discarded during processing. Physico-chemical properties of the discarded pitaya peel were determined in
    order to evaluate its potential for recovery of any value-added materials. The moisture content of the peel was approximately 92.7% and it was low in total soluble solids, protein, ash and fat content. Betacyanin pigment (150.46 ± 2.19 mg/100 g) and pectin (10.8%) were high in the peel. Glucose, maltose and fructose were detected in the peel but not sucrose and galactose. The peel also had very high insoluble and soluble dietary fibre which had exhibited a good ratio of insoluble dietary fibre to soluble dietary fibre (3.8: 1.0).

    The proximate compositions, total dietary fibre (TDF) content, textural properties and sensory acceptability of yeast breads formulated with 0%, 2%, 4% and 6% of cornsilk powder (CSP) were studied. The protein, ash and TDF contents of yeast breads were increased in line with the CSP level added whereas moisture content was decreased. Yeast bread added with 6% CSP recorded the highest content of TDF (5.91%), protein (9.76%) and ash (1.03%) compared to other formulation of yeast breads containing lower percentage of CSP. Besides, texture profile analysis (TPA) reported that the firmness, gumminess and chewiness of yeast breads increased directly proportional to the level of CSP added mainly due to higher content of TDF and lower content of moisture. However, for the yeast bread added with 2%CSP, there were no significant differences compared with control yeast bread. Among all cornsilk-based yeast bread, formulation containing 2% CSP had the highest scores for all attributes including overall acceptance and there were no significant differences with control yeast bread. The present study indicated that the addition of 2% CSP could be an effective way to produce functional yeast bread without changing negatively its desirable textural and sensory acceptability.

    This study was focused on the effect of incorporation of oyster mushroom, Pleurotus sajor- caju (PSC) powder to partially replace chicken meat in frankfurters on nutritional composition, β-glucan content and textural properties. The frankfurters were formulated with either 0 (control), 2, 4 or 6% of PSC powder. The results show control chicken frankfurter had the highest fat content (11.60%) while 6% PSC frankfurter had the lowest value (10.74%). In other nutrient, ash, moisture and carbohydrate content in all samples ranged from 1.55 to 1.92%, 59.36 to 61.98% and 8.84 to 13.09%, respectively. Apparently, total dietary fiber of chicken frankfurter was increased in line with the levels of PSC powder (0.08 - 6.20%). All samples recorded β-glucan in the range from 0.16 to 1.43%, except for control sample. The texture profile showed that both adhesiveness and cohesiveness attributes were not significantly different among all mushroom-based frankfurters. However, frankfurter added with 6% mushroom was more cohesive and springier than the control formulation. In summary, partial replacement of chicken meat with PSC powder resulted in enhancement of dietary fibres up to 6.20% and β-glucan up to 14.30% significantly, lowering fat content but unchanged adhesiveness and cohesiveness attributes. Therefore, PSC powder can be considered to be used as an alternative functional ingredient to improve nutritional values of processed food products.

    There is an increase need and demand to update Malaysian Food Composition Database (FCD) which was last updated in 1997. The current FCD program was designed to expand the quantity and improve the quality of the existing database. The present work was aimed to determine the nutrient content of commercial rice products from three rice varieties classified as raw and processed foods, namely Basmati, Siam, and Fragrant rice. A total of six brands from each type of rice were sampled from a local supermarket within Klang Valley. Analyses were carried out for 27 nutrients that include proximate (Energy, Water, Protein, Fat, Carbohydrate, Total Dietary Fibre, and Ash), minerals (Magnesium, Calcium, Sodium, Iron, Zinc, and Copper), water soluble vitamins (C, B1, B2, B3, B6 and B9), fat soluble vitamins (A and E), total sugar, fatty acids (total saturated fat, total monounsaturated fat and total polyunsaturated), trans fatty acids, and cholesterol. The three rice varieties were found to contain comparable nutrient levels except for vitamin C, B1, A, E and total sugar which were not detected in all samples. The fatty acid (total saturated, total monounsaturated, and total polyunsaturated) as well as trans- fatty acid were detected at very low levels. Cholesterol was not detected in all samples. These findings can be utilised in raising public awareness and assistance to better estimate nutrient contents and intake depending on the varieties of rice.

    Red pitaya (Hylocereus polyrhizus) peel is a rich source of fibre, antioxidant and betacyanin; however, it is discarded during processing, so it is able to cause environmental problems. In order to convert the fruit waste to potential by-product ingredients, drum drying is used as pre-treatment to create an ingredient which is shelf-stable. In this study, the effects of rotation speed and steam pressure of drums on the physico-chemical properties of pitaya peel that had undergone drum drying are investigated. Pitaya peel was dried in a laboratory scale double drum dryer at rotation speed of 1, 2, and 3 rpm at steam pressure of 1, 2, and 3 bar. The drum dried pitaya peel was then further analyzed based on percentage yield, moisture content, water activity, betacyanin retention and color change. Interaction of steam pressure and rotation speed gives significant effect (p < 0.05) on percentage yield, moisture content, water activity, betacyanin retention and Hunter L value, whereas it has no significant on Hunter a and b values. The best combination parameters (1 rpm and 2 bar) yield the highest betacyanin retention (80.21 mg/g of dry solid), acceptable moisture content (10.66% wet basis), water activity (aw = 0.42) and with 7.61% of yield.

    The optical and textural properties of chicken patty formulated with different level of grey oyster mushroom (Pleurotus sajor-caju) at 0, 25 or 50% to replace chicken meat were investigated. The addition of up to 50% oyster mushroom to chicken patty formulations did not change colour a*(redness),compared with the control patty. Chicken patties containing oyster mushroom had lower L* value ranging from 51.02 – 52.65 compared to that of the control patty (57.86). All oyster mushroom-based patties had lower colour b*(yellowness) value compared to chicken patty without mushroom. The hardness of chicken patty decreased proportionally with the level of oyster mushroom. On the other hand, oyster mushroom-based patties were springier than the control patty. Chicken which was replaced with 25% of fresh mushroom, recorded the highest moisture retention (77.19%) and cooking yield (80.71%), respectively. However, replacement of 25% of oyster mushroom with chicken breast in chicken patty formulation was not change the moisture retention, fat retention and cooking yield compared to control patty. Chicken patty added with 50% ground oyster mushroom the highest concentration of total dietary fibre (TDF) at 4.90 g/100 g compared to chicken patty containing 25% of mushroom (3.40 g/100 g) and control (1.90 g/100 g). In summary, the addition of oyster mushroom in chicken patties has decreased the lightness, yellowness, hardness and chewiness while no changes were noted in the redness of the patties.

    Mushrooms are well known to be healthy because they are low in calories, fat and cholesterol level but rich in vitamin and other essential nutrients. The grey oyster mushroom, Pleurotus sajor-caju (PSC), is a common edible mushroom and is now grown commercially around the world for food and food products. The ability of PSC in changing physical characteristics and sensory properties of beef patty formulated with this fungus were investigated. Result shows beef patty added with 50% ground PSC recorded the highest concentration total dietary fibre (TDF) at 9.95 g/100g compared to beef patty containing 25% of PSC (7.00 g/100g) and control (3.90g/100g).     Kenaf (Hibiscus cannabinus) seeds have always being wasted as agricultural waste. Recent studies revealed that the seeds contain high fiber. The purpose of this study is to develop defatted kenaf seeds yellow noodles (DKSY) and assess the nutritional and physicohemical properties of the noodles. Defatted kenaf flour at 25% and 75% were used to make DKSY noodles and compared to wheat yellow noodles (Control). Fresh DKSY noodles were analyzed for their nutritional and physiochemical properties. The ash and fiber contents increased in order of Control > 25% DKSY > 75% DKSY noodles. While total phenolic contents (TPC) was found to be higher in 75% DKSY noodles (138.30 ± 1.63 mg GAE/100 g) than Control noodles. Colour (L, b) and hardness decreased in order of Control > 25% DKSY > 75% DKSY indicating that DKSY noodles developed less quality than Control noodles. However, cooking loss values were found to be in the same order while cooking values exist in the opposite order indicating that. DKSY noodles have better noodle cooking quality. In conclusion, nutritional properties and noodle cooking quality of yellow noodles increased with higher concentration of defatted kenaf flour but the physicochemical properties were compromised. More research needs to be done in order to develop a formulation that can increase all of the attributes studied.

    In this study, two types of plants materials were used namely Garcinia atrovirdis and Cynometra
    cauliflora to determine the proximate composition, mineral content and antioxidant activities. Total phenolic content (TPC) and ferric reducing antioxidant power (FRAP) assay had been used to determine antioxidant activity in both samples. The moisture, ash, fiber, fat, protein and carbohydrate content in both samples were determined by using Association of Official Analytical Chemists (AOAC) methods. Mineral content in the sample was determined using Atomic absorption spectrophotpmetry (AAS). The results showed higher TPC and FRAP values in Cynometra cauliflora compared to Garcinia atrovirdis. Methanol extractions gave higher TPC and FRAP values compared to water extraction. The results obtained indicated that both samples have the potential to be as a source of natural antioxidants. Further study should be conducted to explore the benefits of underutilized fruits not only in antioxidant activity but other usages as well.

    Phoenix dactylifera L (Date palm) is one of the oldest known fruit crops in the world, and
    the consumption of date fruits is no longer restricted to the Middle Eastern countries. Date
    palm kernels are waste products of date fruit industry which are normally being discarded.
    Based on their dietary fiber content; date palm kernels (DPK) have been proposed to be used
    as fiber-based food supplement, caffeine free coffee alternative and animal feed ingredient.
    Hence, utilization of such waste is highly desirable for the date industry. To accommodate these
    benefits, and subsequent to some uses associated with DPK, this study sought to investigate the
    biochemical and nutritional values of the Barhi date palm kernels (BDPK) grown in Iraq. The
    results show that BDPK is an excellent source of dietary fiber (66.24 g/100g). Glutamic acid
    was found to be the predominant amino acid, (0.674 g/100g), followed by Arginine and aspartic
    acid (0.437 g/100g and 0.320 g/100g, respectively). Potassium was the most occurring mineral
    in BDPK (2.39 g/kg), and the main sugars were sucrose and fructose (0.548 g/100g and 0.249
    g/100g, respectively). Gas-liquid chromatography revealed that the main unsaturated fatty acid
    (USFA) was oleic acid (40.927 mg/100g), while the main saturated fatty acid (SFA) were lauric
    acid (20.270 mg/100g) and myristic acid (12.288 mg/100g). Furthermore, the BDPK depicted
    considerable concentrations of vitamins, in which vitamin B5 (40.4 mg/100g) showed the
    highest value. The results obtained indicate a strong potential for BDPK to be used in human
    nutrition, cosmetics, and pharmaceutical applications and may provide an important economic
    advantage through increasing the utilization of BDKP while also additive value will be added
    to the residue.
