    Vibrio parahaemolyticus is well known to be abundantly distributed in marine, coastal and
    estuarine environments. Since 1951, V. parahaemolyticus had been the source of numerous
    outbreaks related to contaminated or mishandled seafood. However, V. parahaemolyticus
    had been detected on other types of food. This issue has prompted this study to investigate
    on the prevalence of V. parahaemolyticus in various food samples and determine the risk
    associated with it. The results of the MPN-plating technique of the study indicated that V.
    parahaemolyticus was detected in seafood (33.3%, 95% Confidence Interval [CI] 31.9 – 34.8 ,
    94 – 290 MPN/g) and vegetables (10.0%, 95% CI 9.7 – 10.3 , 9.2 – 23 MPN/g) while negative

    E. coli O157:H7 is associated with life threatening diseases such as hemorrhagic colitis (HC), hemolytic uremic syndrome (HUS) and thrombotic thrombocytopenic purpura (TTP). Raw milk is considered a high risk food as it is highly nutritious and serves as an ideal medium for bacterial growth. The aim of this study was to investigate the prevalence of E. coli O157:H7 in raw cow, goat and buffalo milk samples. MPN-PCR method targeting the major virulence rfbE gene and fliCH7gene of E. coli O157:H7 was used. Total of 177 raw milk samples were collected from local dairy farms in the state of Selangor, Malaysia. The highest prevalence of E. coli O157:H7 was found in raw cow milk (18.75%).     Listeria monocytogenes (L. monocytogenes) is an important foodborne pathogen which can cause foodborne listeriosis with high mortality rates especially in susceptible population groups such as pregnant women, elderly and immunocompromised individuals. The biosafety level of L. monocytogenes in chicken offal has becomes a great concern as chicken offal is a cheap source of protein and it is often served as side dishes in South East Asian countries. In Malaysia, the consumption of chicken offal has almost doubled from 5 g per capita per day in the early 1980s to 9 g per capita per day in 2009. In this study, risk assessment was conducted to estimate the risk of acquiring listeriosis from consumption of chicken offal in Malaysia. A microbial survey on the prevalence and concentration of L. monocytogenes in chicken offal were carried out in Selangor, Malaysia over a one-year period (November 2010 to October 2011). It was assumed that there were no seasonal changes in the prevalence and consumption pattern all year round. Assuming that 5.6 million people in Selangor, Malaysia consume a single serving (125 g) of chicken offal per week, it is estimated that in a year there could be 0.61 cases and 1.98 × 10-4 cases of listeriosis per 100,000 population of pregnant woman and immunocompromised individual, respectively. However, the potential for getting listeriosis among the healthy population was very low, only 1.39 × 10-8 cases per 100,000 population. This study demonstrated risk assessment model not only used as a tool to estimate the risk of acquiring illness but it can influence public health surveillance and providing data in setting appropriate level of protection.

    Starch and hydrocolloids were often used together in food industry to modify the rheological properties with the aim to enhance the starch tolerance to processing conditions. As such, the rheological properties of xanthan gum (XG), carrageenan, high (HMP) and low methoxyl pectin (LMP), with native corn starch (NCS) and modified corn starch (MCS) at different temperature were evaluated in this study. The flow behavior index (n) of corn starch-hydrocolloid mixtures were observed in the range from 0.160 to 0.604 where indicated the shear thinning behavior. The addition of hydrocolloids increased the apparent viscosity of the starch system. NCS mixtures showed consistency index (K) and apparent viscosities (na,100) decreased with increase in the temperature. The addition of XG and carrageenan increased the storage (G’) and loss (G”) moduli. Among the hydrocolloids, the XG addition to the NCS exhibited superior viscoelastic properties as evidenced by the highest G’ and lowest tan δ values. XG was observed capable to increase while pectin reduced the solid-like starch system. This result provides pragmatic data for food engineer in process design and food product development by minimizing the cost of trial and error.

    All living organisms including human beings in this biosphere are constantly exposed to a variety of xenobiotics. The enormous chemical load in the environment has been primarily through the modernization, industrialization and changes in lifestyle. The changing food habits to suit modern living pose a serious threat to a healthy life. Among others, consumption of soft drinks invariably forms a part of modern life. Mostly children and adolescents are the target groups vulnerable to frequent consumption, compromising the nutritious foods such as fruits, vegetables, milk and milk products. Logically, the quality of the soft drinks is determined by the type and quantity of chemicals present, including those present inherently in the water used for such preparations. The impact of soft drinks on human health has been a subject of in depth research. Consumption of soft drinks plays a major role in a variety of diseases like obesity, diabetes, dental and bone disorders and others, more so among children and adolescents. The toxic effects of soft drinks have gained much attention, due to the frequent scientific reports and media attention. The objective of this review is to provide a comprehensive scrutiny of the impact of soft drinks on health, as well as to suggest alternatives for a healthy life style.

    The introduction of new agricultural commodities and products derived from modernbiotechnology may have an impact on human and animal health, the environment and economiesof countries. As more Genetically Modified Organisms (GMO) enter markets worldwide, themonitoring of GMOs is being preferred for obvious reasons such as determination of seed purity,verification of non-GMO status of agricultural crops and fulfilling GMO labeling provisions, tomention a few. Numerous GMO analytical methods which include screening, identification andquantification have been developed to reliably determine the presence and/or amount of GMOin agricultural commodities, in raw agricultural materials and in processed and refined ingredients.The detection of GMOs relies on the detection of transgenic DNA or protein material. For routineanalysis, a good sample preparation technique should reproducibly generate DNA/protein ofsufficient quality, purity and yield while minimizing the effects of inhibition andcontamination.
    The key sample preparation steps include homogenization, pretreatment, extraction andpurification. Due to the fact that analytical laboratories receive samples that are often processedand refined, the quality and quantity of transgenic target analyte (e.g. protein and DNA) frequentlychallenge the sensitivity of any detection method. With the development of GMO analysistechniques, the Polymerase Chain Reaction (PCR) technique has been the mainstay for GMOdetection, and the real-time PCR is the most effective and important method for GMOquantification. The choice of target sequence; for example a promoter, a terminator, a gene, or ajunction between two of these elements, is the single most important factor controlling the specificity of the PCR method. Recent developments include event-specific methods, particularlyuseful for identification and quantification of GM content. Although PCR technology has obvious
    limitations, the potentially high degree of sensitivity and specificity explains why PCR in its various
    formats, is currently the leading analytical technology employed in GMO analysis. Comparatively, immunoassays are becoming attractive tools for rapid field monitoring for the integrity of agricultural commodities in identity preservation systems, whereby non-specialised personnel can employ them in cost-effective manner. This review discusses various popular extraction methodologies and summarises the current status of the most widely used and easily applicable GMO analysis technologies in laboratories, namely the PCR and immunoassay technologies.

    Food and fuel prices have soared in recent years affecting most adversely the poor and those with fixed incomes. Since 2000, wheat price in the international market has more than tripled and maize prices have more than doubled. The price of rice, the staple of billions in Asia, has tripled in the past year. The surge of food prices has been blamed on multiple factors including higher energy and fertilizer costs, greater global demand, drought, the loss of arable land to biofuel crops and price speculation. In light of the spiraling rise in food prices, there is the prospect of increasing rates of under-nutrition worldwide. As it is, 800 million are estimated to be suffering from chronic malnourishment, with another 2.1 billion people living close to subsistence levels on less than US$2 a day. Some perspectives of the food production experience of Malaysia are shared here as a case of a country that has built up capabilities and resources through high level of foreign and domestic investment leading to a diversified economy. In response to the recent surge in the price of rice, the Malaysian government announced the setting up of a dedicated fund amounting to US$1.25 billion to increase production of food including fruits and vegetables, and targeting 100% self-sufficiency in rice, by growing rice on a massive scale in Sarawak. During the current five-year development plan for the period of 2006-2010, (Ninth Malaysia Plan), the role of the agriculture sector is considerably enhanced to be the third pillar of economic growth, after manufacturing and services. Among the measures taken, are those aimed at increasing incomes of smallholders and fishermen mainly through improving productivity. These measures include encouraging more rice farmers to participate in mini-estates and group farming, providing financial assistance to rehabilitate cocoa, pepper and sago smallholdings, enhancing the capabilities of coastal fishermen, and setting up of a special program to assist poor households in the agriculture sector to diversify their sources of income. The various socio-economic programs in Malaysia that have been put in place over the years may have cushioned to some extent so far the severity of the dramatic hikes in food prices.

    Phytates have been considered as a threat in human diet due to its antinutrients behaviour which
    known as strong chelators of divalent minerals such as Ca2+, Mg2+, Zn2+ and Fe2+. Phytic acid has a potential for binding positively charged proteins, amino acids, and/or multivalent cations or minerals in foods. The resulting complexes are insoluble, difficult for humans to hydrolyze during digestion, and thus, typically are nutritionally less available for absorption. The reduction of this phytates can be achieved through both enzymatic and nonenzymatic removal. Enzymatic degradation includes addition of either isolated form of wild-type or recombinant exogenous phytate-degrading enzymes microorganisms in the food matrix. Non-enzymatic hydrolysis of phytate occurred in the final food during food processing or physical separation of phytate-rich parts of the plants seed. The application of phytase with respect to breadmaking process, probiotics, animal feed supplement and transgenic crops are emphasised in this paper.

    Protein Efficiency Ratio (PER) is the most widely used method for determining protein quality. The studies involved a few category of products as raw materials namely poultry products, beef burger products, fish and fish products, soy products and palm kernel cake in animal diet preparation were compiled to compare the data. Data from the proximate analysis showed that protein content in soy protein isolate (SPI) was the highest (95.00%) followed by meat such as mackerel fish (89.09%) and beef (88.60%). Results from feed consumption and total protein consumed showed that the rats fed with mechanically deboned poultry meat (MDPM) products (excluding broiler back) consumed more feed, ranging from 469.2g to 422.3g during the study while the lowest total feed consumed (157.7g) was recorded in the rat fed a diet of fermented palm kernel cake (fPKC). The total protein consumed by rat for diets of fish and fish products such as canned sardine was 62.36g, mackerel 61.76g and anchovy at 58.91g, followed by MDPM products. Tempeh (14.72g) and fPKC diet (16.3g) were among the lowest total protein consumed by the rats. Growth and PER data for rats fed a diet of canned sardine, anchovy and mackerel, as well as mechanically deboned turkey meat (MDTM) and mechanically deboned chicken meat (MDCM) had higher mean body weight (154.80g, 145.20g, 144.81g, 148.7g and 142.5g respectively) compared to rats fed with plant protein diet such as SPI, tempeh and PKC (34.79g, 16.34g and 16.60g respectively) whereas rats fed diets containing fPKC had a mean body weight loss of 24.4g. MDPM showed higher PER value (ranging from 3.01 to 3.34) compared to hamburger group, pure beef and fish group. Tempeh and SPI had lower PER of 1.02 and 1.52 respectively while the lowest PER of 0.50 and -1.50 were shown in PKC and fPKC. The highest digestibility was shown in mackerel (96.99%), followed by canned sardine (96.88%), tempeh (91.41%), meat (90.79%) and pure beef burger (90.04%) while digestibility of PKC and fPKC were much lower (45.70% and 22.60%). Lipid profile of rats fed with palm based fat beef burger showed that palm fat(PF) and red PF did not affect the total cholestrol concentration but resulted in higher high density lipoprotein (HDL)- cholesterol concentration in their blood serum. In summary, the utilization of PF and red PF in beef burger increased the HDL-cholesterol and has no effect on the concentration of total cholesterol in rat blood serum.

    In this paper, attempts will be made to study and understand the lawful and unlawful foods in the light of Islamic Medical law focus on ethical aspect that has been practiced during Islamic civilization. We will realize that lawful and unlawful foods are not, as some imagine, mere pretense, but rather constitute the divine command which protects against many diseases. In order to present such a law, the jurists of Islam needed great acuteness and power of reflection to make them understand the matters relating to lawful and unlawful foods in Islam. To attempt to follow these jurists, in their treatment, of the different school of thoughts (madhahib) would take us far beyond the limits of this research. Thus, we will rather confine ourselves to those laws which are clearly stated in the Qur’an and tradition (hadith), as well as a few of the most important issues dealt with in the different school of thoughts (madhahib).

    Hepatitis A virus infection occurs globally and is causing a public health concern, primarily in developing countries due to its persistent circulation in the environment. The improved sanitary condition and increase in awareness of personal hygiene have led to the marked reduction of HAV prevalence in industrialized countries during childhood and to a shift of the infection towards adulthood. HAV is an environmentally stable, positive single stranded RNA virus that is primarily transmitted by the fecal-oral route, person to person contact or ingestion of contaminated food and drink. One of the main causes leading to HAV infection is epidemiologically linked to the consumption of raw or undercooked shellfish particularly oysters and clams. Due to their filter-feeding style, these shellfishes readily concentrate viruses from the surrounding water containing municipal sewage, and as a consequence pose a health threat to consumers. Therefore, development of detection techniques possessing the requisite sensitivity and specificity for the practical routine monitoring purposes is of great importance necessary for the protection of shellfish-consuming public. Nucleic acid based method such as reverse transcription PCR has emerged as the popular method of choice in view of its rapidity, accuracy and
    sensitivity in contrary of the time-consuming conventional cell culture and hybridization techniques. However, detection of hepatitis A virus is firstly hampered by the non-cytophatic effect of wild type HAV strain, secondly, the low concentration of viral genome present in the environmental sample which requires effective isolation and concentration of virions and lastly the labor-extensive purification and thorough removal of the abundance of the PCR inhibitors which will unfavorably reduce the efficiency of PCR detection.

    Listeria monocytogenes is a gram positive, facultative intracellular pathogen with the capacity to cause
    food poisoning outbreaks as well as severe illness in vulnerable human population groups. It can cause a rare but serious disease called listeriosis with high fatality rates (20–30%) compared with other foodborne microbial pathogens. Although Listeria monocytogenes is infective to all human population groups, it is more likely to cause severe problems among pregnant women, immunocompromised individuals, the elderly and neonates. There are a variety of phenotyphic and genotyphic methods for the detection of Listeria monocytogenes in foods. Recent technological advances have increased the ability of scientists to detect Listeria monocytogenes. The purpose of this review is to discuss molecular characteristics of the Listeria monocytogenes pathogen, standard detection methods of this pathogen in foods based on culture methods, confirmation of species and subtyping based on phenotypic and genotyphic methods.

    This paper is interested in exploring the interrelatedness of some accompanying policy changes and
    initiatives in the selected Asian countries as well as reviewing the Malaysian National Food Security Policy. Actions taken in response to the food crisis in the selected Asian countries have worked out well and produced promising outcomes from a combination of availability, accessibility, utilization, and stability aspects in food security. Malaysia weighted more on availability aspect in food security by introducing more short- and longterm policy measures for boosting paddy and rice production, particularly in Sabah and Sarawak under the National Food Security Policy. However, much of the unhappiness and disequilibrium in the local paddy and rice market were created due to irrational extensive intervention of the Miller Subsidy and Beras Nasional programmes in the nation. Many of the policy measures targeted at area expansion and productivity but it was suggested that the dominant path to achieve the targeted self-sufficiency level is through research and development at specialized and committed paddy and rice research centre. Trade oriented self-reliance approach that strategized with multiple and diversified sources of rice import was tipped to be superior of current selfsufficiency approach.

    Hepatitis A is a liver infection caused by the hepatitis A virus (HAV). Outbreaks of hepatitis A have been linked to the consumption of both raw and cooked shellfish. These outbreaks could induce a public confidence problem over shellfish safety and may result in important economic losses for the seafood industry. The work presented in this study investigated the presence of HAV in shellfish from Peninsular Malaysia. A total of 365 of cultured and wild shellfish from 36 sampling locations located throughout Peninsular Malaysia were examined using a commercial nucleic acid extraction and reverse transcription -polymerase chain reaction (RT-PCR) kit. HAV was not detected in almost all of the shellfish samples xamined. Only one cockle sample from Changkat, Seberang Perai was positive for HAV. The results suggest the absence of HAV or very low amount of HAV viral particles in most of the shellfish examined.

    Sabah Snake Grass (Clinacanthus nutans) is interesting traditional medicine because of pharmacology characteristics that contain rich in phenolic content and antioxidant. The aim of study was to determine the optimum yield and exhaustive time extraction using Peleg’s model. Qualitative and quantification test for detection of orientin and vitexin using method of high performance liquid chromatography (HPLC). Based on the results obtained, the optimum concentration for orientin (0.72 ± 0.002 mg/g) and vitexin (2.10 ± 0.13 mg/g) were observed at 18 h of extraction (texhaustive). The optimum extraction parameters for optimum recovery of phenolic content and antioxidant activities from the leaves of Clinachantus nutans were determined using response surface methodology (RSM). The total phenolic content (TPC) was analyzed using the Folin-Ciocalteu method and antioxidant activities were evaluated through 2,2-diphenyl-1-picrylhydrazyl (DPPH) free radical scavenging activity, 2,2’-azinobis-(3-ethylbenzothiazoline-6-sulfonic acid) (ABTS) free radical scavenging activity and the ferric reducing antioxidant power (FRAP) assay. A central composite rotatable design (CCRD) was employed to investigate the effects of ultrasonic frequency (X1: 25 - 40 kHz), temperature (X2: 40 - 80ºC) and solid-to-liquid ratio (X3: 10 - 30 ml/g) on the recovery of TPC (Y1) and antioxidant activities of DPPH (Y2) and FRAP (Y3). The optimal parameter achieved based on combination of extraction parameters: X1 = 25 kHz sonication capacity, X2 = 80ºC temperature and X3 = 30 g/ml of solid-liquid ratio. These optimum conditions yielded TPC of (25.09 mg GAE/g), DPPH (66.85%), and FRAP (9.44 μmol TE/g). The optimum values of TPC and DPPH from this study are comparable with green tea (benchmark). Our results revealed that distilled water may be a good choice for extracting antioxidant activity of Clinacanthus mutans. Concentration of orientin and vitexin compounds were extracted during optimization exhibited lower than the finding from Peleg model. Prolonged extraction at high temperature during optimization may degrade flavonoid and phenolic acid compounds. However, the concentration of extracted compound (orientin and vitexin) from the optimum parameters had produced high in phenolic content and antioxidant activity. In conclusion, the application of Peleg model was able to determine the extraction exhaustive time at the maximum extract yield. In addition, this study proved that the application both models (RSM and Peleg) have been successfully be able to provide the optimum extraction parameters with high total phenolic content and antioxidant activity.

    The enzymatic hydrolysis of lead tree seed protein with alcalase to obtain Lead Tree Seed Hydrosylate (LTSH) was optimized using response surface methodology (RSM). A three- tiered, factor face centered, central composite design (CCD) was used to study the influence of four independent variables namely: pH (7–9); hydrolysis temperature (50oC, 55oC, 60oC); hydrolysis time (30 min, 60 min, 90 min); and enzyme/substrate (1%, 2%, 3%) ratio on both yield and antioxidant activity. The CCD consisted of twenty-four experimental points and six replicates of central points. All data were analyzed using Design-Expert Software. The optimum conditions obtained from experiments were a pH of 9; an enzyme to substrate ratio of 2%; a hydrolysis time of 90 min; and a temperature of 55°C. Results showed that LTSH derived from optimized hydrolysis exhibited effective ferrous ion chelating activity (92.79%) and strong reducing power (A700 = 3.82) at a concentration of 20 mg/ml. LTSH also demonstrated high DPPH radical scavenging activity (76.21%; IC50 1.99 mg/ml), as well as hydroxyl radical scavenging activity (66.72%; IC50 2.45 mg/ml). Superoxide anion scavenging activity was 55.71% (IC50 3.89 mg/ml) at 20 mg/ml. These results suggest that LTSH has potential as a natural antioxidant of functional food and for use in food processing.

    The optimum combination of Musa paradisiaca (MP) and Trigona sp. Honey (TH) in formulating high antioxidant jelly was analysed for total carbohydrate content (CHO), antioxidant capacity (AC), and acceptability via the Response Surface Methodology. Central composite design was employed to optimise the combination effect of two independent variables; namely MP (X1: 20-100%) and TH (X2: 20-100%) on the recovery of three responses; total carbohydrate content (Y1), antioxidant capacity (Y2), and acceptability (Y3). A polynomial model generated a satisfactory fitting of the experimental data with regards to total carbohydrate content (R2
    = 0.8974, p < 0.0024), total antioxidant capacity (R2 = 0.9702, p < 0.0001), and acceptability (R2 = 0.9136, p < 0.0001). The optimum combination for maximum recovery of CHO, AC and acceptability were 20% of MP and 20% of TBH, with a predicted CHO of 33 Kcal/5 g, AC of
    0.34 nm and acceptability score of 6.16 (< 5: not accepted; > 5: accepted).

    The optimum combination of Baccaurea angulata fruit juice (X1: 15 - 85 ratio) and Trigona sp. honey (TH) (X2: 15 - 85 ratio) in developing a high antioxidant soft jelly was investigated based
    on the antioxidant capacity (Y1), phenolic (Y2), and flavonoid (Y3) content. Response surface
    methodology (RSM), via central composite design (CCD), was used to produce optimal combination effects of the two independent variables (B. angulata fruit juice and TH) for highest
    recovery of antioxidant capacity (AC), total phenolic content (TPC), and total flavonoid content
    (TFC). The polynomial models generated were satisfactory. The lack-of-fit test were higher
    than p > 0.05 for all three analyses, signifying the suitability of the models in accurately predicting the variations. Predicted values of the analysis agreed with those of the experimental values.
    An optimum combination of B. angulata fruit juice and TH was developed (ratio 40:40). The
    sample also exhibited significant FRAP and DPPH radical scavenging activities. Several
    polyphenols were identified for the samples through UHPLC-MS/MS. In conclusion, B. angulata and Trigona sp. honey have high potentials to be used in fortifying the soft jelly samples,
    making them prospective food supplements due to their nutritional and health benefits.

    The present work aims to optimise chicken skin gelatine/carboxymethyl cellulose (CMC) blended film formulation at varying concentrations of CMC and plasticiser (glycerol). The influence of CMC and plasticiser concentrations on the mechanical (tensile strength, TS and elongation at break, EAB) and physical (water vapour permeability, WVP) properties of chicken skin gelatine films were studied using central composite design (CCD), a full factorial design with all combinations of the factors at two levels (high, +1, and low, −1 levels), with the centre points (coded level 0) repeated thrice. An optimised formulation obtained as a proportional mixture of CMC (3%) and glycerol (0.78%), with tensile strength of 0.08 MPa, elongation at break of 167.57 and water vapour permeability of 6.08 × 10-9 g m-1s-1Pa-1. A formulation with 3% CMC and 0.78% glycerol yielded high TS and EAB, but lower WVP, which is desirable for production of food packaging. This novel research offers the packaging industry an alternative source for producing biodegradable food packaging films which are more cost-effective and at the same time reduce environmental problems.

    Resistant starch is the non-digestible portion of starch that reaches the colon and act as a prebiotic to stimulate the activity and growth of beneficial gut microbiota. In the present study, resistant starch content of native (lemantak), commercialized and retrograded sago and starch was analysed, and the in vitro fermentability with known probiotics were investigated. Retrograded starch was produced through two cycles of autoclaving and cooling steps. The resistant starch content of each modified starch were measured based on the method approved by AOAC 2002.02. The in vitro batch fermentation was carried out with inoculation of Lactobacillus acidophilus and Bifidobacterium animalis at 37°C for 24 hours in anaerobic condition. Total bacteria was enumerated at 0, 6, 12 and 24 hours. Highest resistant starch content was shown in lemantak (native sago starch) at 62.61%. Lemantak was also shown to be the most preferred fermentation substrate with the highest number of total bacterial count at all sampling hours. These findings suggest the potential of lemantak as a prebiotic.
