    The aims of this study were to examine the effect of salts (CaCl2, CaSO4 and MgSO4) on the rheological and thermal properties of gelatin extracted from the skins of tropical fishes, sin croaker (Johnius dussumeiri) and shortfin scad (Decapterus macrosoma). It was found that the melting temperatures of fish skin gelatins were increased by 1.5 times as compared to bovine gelatin which was only increased by 0.5 times after holding for 2 h at 5°C. The storage (G’) and loss (G”) modulus of fish skin gelatins were improved with the addition of calcium sulphate (CaSO4) and magnesium sulphate (MgSO4), respectively. However, the storage (G’) and loss (G”) modulus of gelatin solutions were decreased with the addition of calcium chloride (CaCl2). Magnesium sulphate (MgSO4) was found to be an effective salt to improve the bloom value, elastic and viscous moduli of the fish skin gelatin. This study showed that shortfin scad skin gelatin with salt addition possessed better thermal and rheological properties than sin croaker gelatin.

    Using the Malaysian Household Expenditure Survey 2004/2005 data, this study investigated Malaysian consumers’ preference for beef quantity, quality, and lean beef. Demand and price models that incorporated consumer socio-economic variables were estimated via two-stage least squares (2SLS). This study showed that Malaysian consumers tend to demand for more quantity rather than quality of beef products. Malaysian consumers are also more responsive to price changes rather than fat reduction in beef products. It is more profitable for beef market players to increase their production as Malaysian consumers are expected to consume increasing amounts of beef products.

    This study reported the extraction optimization and characterization of cobia (Rachycentron canadum) skin gelatin. Optimization study was carried out to determine the effect of CH3COOH concentration, skin to water ratio, extraction temperature and extraction time on gelatin yield (GY) and gel strength (GS) using Response Surface Methodology (RSM). The optimum conditions were 0.15mol/L for CH3COOH concentration, 82.4oC of extraction temperature, 6 h of extraction time and 1:6 of skin to water ratio, which produced cobia gelatin with GY of 20.10% and GS of 205.6 g. Characteristics of cobia skin gelatin (CG) were then compared to that of commercial bovine gelatin (BG). It was found that the most dominant amino acid in CG was glycine, proline and alanine. There was no difference in foaming and emulsifying properties of CG and BG at 1% concentration, but at 2% and 3% concentration, BG performed better. CG was found to have higher fat binding capacity but lower water holding capacity than BG. Least gelling concentration for CG was recorded at 2% while for BG at 1%. CG and BG had a pI at pH 6.05 and 4.82, respectively. This study shows that cobia skin gelatin has potential as halal alternative to bovine gelatin in food industry.

    This study examines and compares the influence of pH on the functional, rheological and structural properties of eel skin (Monopterus sp.) and bovine gelatins. Functional properties studied and compared were emulsifying capacity and stability; water holding capacity; fat binding capacity; foaming capacity; and foaming stability. The rheological properties studied include gel strength and dynamic oscillatory measurements. The structural properties of eel skin and bovine gelatin were determined by Fourier transform infrared spectroscopy (FTIR). Results obtained showed that eel skin gelatin treated at pH 8 (compared to pH 5) exhibited the higher emulsifying, fat binding, foaming and viscoelasticity properties. The FTIR spectrum assay showed that eel skin gelatin presented a similar structure to that of bovine gelatin. This study demonstrated that pH levels influence functional, rheological and structural properties of eel skin gelatin and that these properties were enhanced to either equal or surpass those of bovine gelatin. Hence, this study indicates that eel skin gelatin has immense potential for use as an alternative to bovine gelatin.

    Some cortical bone specimens from the femurs of adult cows and sea coral of Porites species were studied by using Fourier Transform Infrared Spectroscopy, FTIR. Carbonate were shown to be present by indication of C-O stretch found between 1510-1410 cm -1 in both cortical bone and Porites. Based on the comparison of the relative intensity of CO3 2- bands with respect to the PO4 3- bands, peak intensity of Porites was found to be higher than peak intensity of cortical bone at carbonate band. This explains that Porites skeleton is made up of CaCO3 while bone consists of a mineral, hydroxyapatite Ca5(PO4)3OH with the present of carbonate ions, typically from 3 to 7 wt%.

    Introduction: Owing to the variety of materials and methods employed, comparison of the results and findings from bonding studies is difficult. Until recently, several types of teeth have been used in published research papers as a substrate in orthodontic bonding research including bovine incisors, fresh and rebonded human premolars.     Objective: Previous studies have shown milk to contain cancer inhibitors. In this context, this study was conducted to screen the potential cytotoxic properties of four different types of milk, namely cow's milk, goat's milk, mare's milk and human milk.
    Methods: In evaluating the cytotoxic properties of milk, two different human leukemia cell lines namely, Raji and CEM-SS were used.     Population growth and rise in per capital income have influenced the demand for convenience foods and a meat protein-rich diet. The per capital consumption of beef which had increased from 3.89 kg in 1980 to 5.49 kg in 2006 (DVS, 2006/2007) had resulted in an increased in demand for beef at the rate of 6.2% annually. The local beef production although recorded a 2.5% increased over the last 10 years, is still unable to meat the increasing national demand for beef. In 2008, local production of beef is about 38,250 mt. could only meet about 26.7% of the national demand (DVS, 2008). The gap between supply and demand for beef is expected to widen in the next decades unless efforts is been made to accelerate local production. The lack of number of quality breeding stocks and unorganized breeding system had been the major factors that contribute to the slow growth of the local beef industry.

    Serotypes B: 2 and E: 2 of Haemorrhagic septicaemia found in Asia and Africa cause an economically important disease that affects cattle and buffaloes. The disease has a feature of short clinical course and high morbidity and mortality rates. However, animals surviving HS are usually characterized by decrease productivity.     BACKGROUND: Endometritis, which is one of the most common diseases in dairy cows postpartum, causes severe economic losses, including increased open days, calving intervals, and numbers of services to achieve conception.

    AIM: This study aimed to evaluate the ultrasound method and its agreement with the endometrium cytology method, which is used to diagnose cytological endometritis in beef cows. Moreover, we determined which method has higher sensitivity and specificity at 4 and 5 weeks postpartum.

    MATERIALS AND METHODS: The study was conducted 20-35 days postpartum. A total of 53 clinically healthy beef cows (28 Brangus and 25 Kedah-Kelantan breeds) from three beef farms were obtained. All cows were evaluated at 4 and 5 weeks postpartum, using ultrasound and cytobrush endometrial examination methods to diagnose cytological endometritis.

    RESULTS: Endometrial cytology result showed that 11.3% (6/53) and 9.4% (5/53) of the cows exhibited cytological endometritis 4 and 5 weeks postpartum, respectively. A weak-to-moderate agreement found between the diagnostic methods (k=0.29 - 0.50; p<0.01 and k=0.38 - 0.49) at 4 and 5 weeks postpartum respectively.

    CONCLUSION: The percentage of beef cows that were positive to cytological endometritis was low (polymorphonuclear cells, ≥8%) at 4 and 5 weeks postpartum. Results showed that the ultrasound method is useful and practical for diagnosing endometritis 4 and 5 weeks postpartum. This method exhibited 60% sensitivity, 93.8% specificity, and a 0.50 kappa value, especially when presence of intrauterine fluids and measurement of cervix diameter used in combination.

    OBJECTIVE: This study aimed to elucidate whether innovative sous vide treatment has a significant influence on the beef semitendinosus muscle as compared to common sous vide treatment and traditional cooking.

    METHODS: The innovative sous vide treatments were cooked at 45°C and 65°C for 6 h (SV45-65), common sous vide treatment at 45°C and 65°C for 3 h (SV45 and SV65) and traditional cooking at 75°C for 30 min (CON75). Water loss and cooking loss, as well as the physical properties (color and shear force) and chemical properties (protein and collagen solubility) of the treated meat, were investigated.

    RESULTS: The results obtained indicated that the innovative sous vide with double thermal treatment (SV45-65) and cooked with air presence (CON75) resulted to lower a* and higher b* values, respectively. The water loss and cooking loss increased when temperature increased from 45°C to 65°C, and lower water loss was recorded in SV45 and CON75. These samples presented higher water content and revealed strong correlation to protein solubility. Warner-Bratzler shear force (SF) analysis showed the marked interaction between cooking temperature and time. Sample cooked at a high temperature (CON75) and a long period (SV45-65) showed a significantly lower value of SF than sample SV65 (p<0.05). Interestingly, there was no difference in SF values between SV45-65 and CON75.

    CONCLUSION: The innovative sous vide treatment with double thermal effect appears an attractive cooking method as compared to common sous vide and traditional cooking method, as it has a potential for improving tenderness values of cooked beef semitendinosus muscle.

    Pork and bovine collagen incorporated into meat products showed promising
    functional properties as food ingredients but has the halal issue. This study
    investigated the effect of incorporating fish collagen hydrolysate (FCH) as a fat replacer
    in buffalo patties in terms of proximate values, texture and colour properties. There
    were five different formulations including a control (10% fat, 0% FCH), A (7.5% fat, 2.5%
    FCH), B (5% fat, 5% FCH), C (2.5% fat, 7.5% FCH), and D (0% fat, 10% FCH). There were

    This study was designed to characterise the lameness cases in cattle reported to the University Veterinary Hospital (UVH) of

    Lameness continues to be a welfare and economic issue for dairy cows. However, the consequences of lameness seem to be better understood by veterinarians and related personnel in comparison to dairy farmers. Prompt detection and treatment of lame cows is essential in reducing its negative impact on milk processing systems. To that end, understanding farmers' perceptions regarding the significance of lameness to dairy cows is vital. One fundamental aspect is the underestimation of lameness prevalence by dairy farmers, which is as a result of different understanding of the problem. The same applies to their decision to treat lame cows and to adopt various detection and management practices. All of these shortcomings contribute to poor cattle welfare and economic losses in dairy production. This review summarizes the results of studies that have investigated dairy farmers' perceptions of lameness and the associated implications on the wellbeing and productivity of dairy cows. Factors associated with farmers' attitudes toward claw health and lameness management are also presented. Additionally, economic observations relating to lameness prevention, treatment and the adoption of lameness detection systems are also highlighted. To strengthen these points, interventional programmes requiring farmers' participation are discussed as a promising approach in answering some of these challenges. A review of the literature indicates both the opportunities and barriers inherent in the tackling the lameness issue from the farmers' perspectives. Such knowledge is crucial in identifying measures on how to motivate dairy farmers towards proper lameness management.

    Anaerobic composting is a promising method to fully transform food wastes into useful
    materials such as biofertilizer and biogas. In this study, the optimum proportions of food
    wastes containing vegetable, fruit and meat wastes with dry leaves or cow manure for
    composting were determined using the simplex centroid design and response optimizer.
    The effectiveness of the pilot-scale composting process was evaluated based on the targeted
    compost quality of C/N ratio at 21, pH value at 8 and electrical conductivity of 1 dS/m.
    Food wastes composting formulation with dry leaves suggested high percentage of dry
    leaves, 86.9% with low food wastes composition of 13.1% constituted by vegetable waste
    (1.1%), fruit waste (4.9%) and meat waste (7.1%). With cow manure formulation, only
    6% of cow manure was recommended with
    another 94.0% of food wastes contributed
    by a fair mix of vegetable waste (23.2%),
    fruit waste (34.3%) and meat waste (36.5%).
    The developed regression models were
    experimentally validated with predicted
    responses obtained in acceptable ranges for
    C/N ratio (21.2 - 21.8), pH (7.92 - 7.99) and
    electrical conductivity (0.97 - 1.03 dS/m).

    OBJECTIVE: To disseminate the portable sequencer MinION in developing countries for the main purpose of battling infectious diseases, we found a consortium called Global Research Alliance in Infectious Diseases (GRAID). By holding and inviting researchers both from developed and developing countries, we aim to train the participants with MinION's operations and foster a collaboration in infectious diseases researches. As a real-life example in which resources are limited, we describe here a result from a training course, a metagenomics analysis from two blood samples collected from a routine cattle surveillance in Kulan Progo District, Yogyakarta Province, Indonesia in 2019.

    RESULTS: One of the samples was successfully sequenced with enough sequencing yield for further analysis. After depleting the reads mapped to host DNA, the remaining reads were shown to map to Theileria orientalis using BLAST and OneCodex. Although the reads were also mapped to Clostridium botulinum, those were found to be artifacts derived from the cow genome. An effort to construct a consensus sequence was successful using a reference-based approach with Pomoxis. Hence, we concluded that the asymptomatic cow might be infected with T. orientalis and showed the usefulness of sequencing technology, specifically the MinION platform, in a developing country.
