    Banana pulp (BP) noodles prepared by partial substitution of wheat flour with green Cavendish banana pulp flour were assessed pH, color, tensile strength and elasticity, and in-vitro hydrolysis index (HI) and estimated glycemic index (GI). BP noodles had lower L* (darker) and b* values (less yellow) but higher tensile strength and elasticity modulus than control noodles. Following an in-vitro starch hydrolysis studies, it was found that GI of BP noodles was lower than control noodles. Partial substitution of green banana pulp into noodles may be useful for controlling starch hydrolysis of yellow noodles.

    The effect of ribose-induced Maillard reaction on the physical and mechanical properties of gelatin films was investigated. Bovine gelatin solution (5 g/100 mL) containing glycerol and sorbitol (1:1) was mixed with 20% (R20), 40% ribose (R40), or 40% sucrose (S40) (weight % is based on gelatin dry weight) followed by heating (90ºC, 2 h) and oven drying to produce dried gelatin films. R20 and R40 films were brownish in color with lower light transparency, while CF (control film; without sugars) and S40 were colorless and had higher transparency. Tensile strength and Young Modulus values of the films were in the order; CF > R20 > R40 > S40, while elongation at break was in the order; R40 > S40 > R20 > CF. Water solubility and swelling percentages of the films were in the order; CF > S40 > R20 > R40, indicating the occurrence of insoluble “Maillard complexes” within R20 and R40 films. R20 and R40 films showed maximum light absorption at wavelength of 200 − 350 nm, whilst S40 and CF showed maximum absorbance at 200 − 250 nm. The addition of ribose yielded gelatin films with increased protection against UV light, even though the presence of sugars might had disrupted the inter connection of junction zones and decrease in mechanical properties. Occurrence of the Maillard reaction within R20 and R40 films could be the main reason for differences in physical and mechanical properties of films containing ribose that were formed from heated film-forming solutions.

    The addition of ribose to minced chicken or minced pork followed by heating at 95oC yielded minced
    meat with different pH, colour (CIE L*, b*) and absorbance values that can be used as indicators for species differentiation. The higher intensity of the Maillard reaction parameters in minced chicken was due to the higher protein and lysine contents, and the presence of more water-soluble proteins within the minced chicken during heating. Cluster analysis using Maillard reaction parameters showed that the two types of minced meat could be classified into two different groups. A confidence interval (95% confidence) analysis revealed that the absorbance, CIE L* values, and CIE b* values could be used as indicators for differentiation between the two types of minced meat, as the intervals between these Maillard reaction parameters for the two minced meats were far apart.

    Physical properties of ripe banana flour were studied in Cavendish and Dream banana, in order to distinguish the two varieties. Flour was analyzed for pH, total soluble solids (TSS), water holding capacity
    (WHC) and oil holding capacity (OHC) at 40, 60 and 80 °C, color values L*, a* and b*, back extrusion force
    and viscosity. Physical properties data were analyzed by cluster analysis (CA) and discriminant analysis (DA). CA showed that the two types of flour were different in terms of selected physical properties. DA indicated that WHC at 60 °C was the main contributor in discriminating the two types of flour.

    Channa striatus (“haruan”) fish destined for fillet preparation was subjected to two freezing treatments, freezing with distilled water (FW) or freezing directly without distilled water (DF). Fish that was freshly processed without freezing served as control (C). Fillet yield (%) was in the range 33.8% to 35.3% and the highest yield was recorded in FW samples. Whole Fillet Powder (WFP) was prepared from the fillets through low temperature vacuum oven drying (50°C) and its composition and physicochemical properties were assessed. There was no significant difference in moisture and protein contents of all samples (p > 0.05). All WFP were generally dark in colour with whiteness indices ranging from 55.23 - 63.98. The redness (a*) values were 4.33, 11.12, 8.83 whilst the yellowness (b*) were 19.31, 23.04, 21.20 for C, WFP-FW and WFP-DF respectively. WFPs were generally high in histidine, arginine, threonine and tyrosine when compared to egg whites and these (except histidine) and other amino acids (serine, glycine, methionine and phenylalanine) were significantly higher (p < 0.05) in WFP-FW compared to other samples. Overall, freezing treatments affected the composition and physicochemical properties of WFPs.

    The physical attributes (pH and colour), cooking yield, textural and mechanical properties (firmness, tensile and texture profiles analyses) and structural breakdown properties (multiple extrusion cell with added artificial saliva) of five yellow alkaline noodle (YAN) formulations were studied. Samples used were noodles with (a) typical formulation (control), (b) soy protein isolate (SPI), (c) soy protein isolate plus microbial transglutaminase enzyme (SPI/MTGase), (d) green banana pulp flour (GBPu) and (e) green banana peel flour (GBPe). Compared to other noodles SPI/MTGase noodle showed significantly (P < 0.05) higher values in terms of textural, mechanical and breakdown properties. Incorporating SPI, banana pulp and peel flours into the noodles had imposed some differences on most of the mechanical and textural parameters from the control YAN. However, these noodles could not be clearly distinguished in term of structural breakdown properties.

    Kedatangan spesies burung hijrah ke Hutan Paya Laut Matang, Perak merupakan suatu fenomena unik dan amat berpotensi untuk dikomersialkan. Namun begitu sejak sepuluh tahun kebelakangan ini kedatangan spesies burung hijrah ke kawasan ini mencatatkan penurunan yang membimbangkan. Pembangunan di sekitar kawasan Hutan Paya Laut Matang dikenal pasti menjadi faktor utama penurunan ini. Selain itu, pengurusan dan pemantauan terhadap spesies burung hijrah yang tidak bersistematik juga menyumbang kepada permasalahan ini. Kaedah pengurusan dan pemantauan burung hijrah secara konvensional masih diamalkan oleh Jabatan Hidupan Liar dan Taman Negara (PERHILITAN) dalam merekod data dan maklumat yang diperoleh. Oleh itu kajian ini dilakukan dengan memperkenalkan pendekatan teknologi Sistem Maklumat Geografi (GIS) dan Penderiaan Jauh sebagai aplikasi utama yang dapat membantu dalam memperbaiki pengurusan dan pemantauan burung hijrah. Aplikasi GIS digunakan dalam memetakan data parameter kajian yang diperoleh menggunakan perisian yang bersesuaian iaitu ArcGIS 10.1 dan Penderiaan Jauh digunakan untuk memodelkan parameter kajian menggunakan aplikasi dalam perisian ERDAS Imagine 8.5. Sebanyak enam parameter kajian digunakan dalam kajian ini iaitu suhu, taburan hujan, makanan, ketinggian, gunatanah dan liputan tanah. Pemodelan setiap parameter kajian ini membolehkan kesan setiap parameter kajian terhadap taburan burung hijrah dalam suatu kawasan ditunjukkan dalam bentuk pemetaan. Hasil pemodelan ini juga membolehkan parameter yang terpenting dan paling mempengaruhi taburan burung hijrah bagi kawasan Hutan Paya Laut Matang dikenal pasti. Maklumat ini membolehkan DWNP lebih memahami keperluan burung hijrah dalam pemilihan habitat mereka. Selain itu, hasil pemodelan ini membantu DWNP dalam mengatur strategi pelaksanaan program pemeliharaan dan pemuliharaan di kawasan sekitar Hutan Paya Laut Matang bagi memastikan kedatangan spesies burung hijrah secara berterusan.

    Ozonation, combined with the Fenton process (O(3)/H(2)O(2)/Fe(2+)), was used to treat matured landfill leachate. The effectiveness of the Fenton molar ratio, Fenton concentration, pH variance, and reaction time were evaluated under optimum operational conditions. The optimum removal values of chemical oxygen demand (COD), color, and NH(3)-N were found to be 65%, 98%, and 12%, respectively, for 90 min of ozonation using a Fenton molar ratio of 1 at a Fenton concentration of 0.05 mol L(-1) (1700 mg/L) H(2)O(2) and 0.05 mol L(-1) (2800 mg/L) Fe(2+) at pH 7. The maximum removal of NH(3)-N was 19% at 150 min. The ozone consumption for COD removal was 0.63 kg O(3)/kg COD. To evaluate the effectiveness, the results obtained in the treatment of stabilized leachate were compared with those obtained from other treatment processes, such as ozone alone, Fenton reaction alone, as well as combined Fenton and ozone. The combined method (i.e., O(3)/H(2)O(2)/Fe(2+)) achieved higher removal efficiencies for COD, color, and NH(3)-N compared with other studied applications.

    The removal of concentrated colour (around 5039 Pt-Co) and chemical oxygen demand (COD; around 4142 mg L-1) from matured landfill leachate through a novel combination of humic acid extraction and coagulation with natural oil palm trunk starch (OPTS) was investigated in this study. Central composite design from response surface methodology of Design Expert-10 software executed the experimental design to correlate experimental factors with desired responses. Analysis of variance developed the quadratic model for four factors (e.g. coagulant dosage, slow mixing speed and time and centrifugation duration) and two responses (% removal of colour, COD). The model confirmed the highest colour (84.96%) and COD (48.84%) removal with a desirability function of 0.836 at the optimum condition of 1.68 g L-1 coagulant dose, 19.11 rpm slow mixing speed, 16.43 minutes for mixing time and 35.75 minutes for centrifugation duration. Better results of correlation coefficient (R2 = 0.98 and 0.96) and predicted R2 (0.94 and 0.84) indicates the model significance. Electron microscopic images display the amalgamation of flocs through bridging. Fourier transforms infrared spectra confirmed the existence of selected organic groups in OPTS, which eventually signifies the applied method.

    Heterogeneous combinations of organic compounds (humic acid (HA) and fulvic acid) are the prime factor for the high concentration of colour and chemical oxygen demand (COD) in semi-aerobic stabilized landfill leachate. These organics are less biodegradable and cause a severe threat to environmental elements. Microfiltration and centrifugation processes were applied in this study to investigate the HA removal from stabilized leachate samples and its corresponding interference with COD and colour. The three-stage extraction process recovered a maximum of 1412 ± 2.5 mg/L (Pulau Burung landfill site (PBLS) leachate), 1510 ± 1.5 mg/L (Alor Pongsu landfill site (APLS leachate) at pH 1.5 and 1371 ± 2.5 mg/L (PBLS) and 1451 ± 1.5 mg/L (APLS) of HA (about 42% of the total COD concentration) at pH 2.5, which eventually indicates the process efficiency. Comparative characteristics analysis of recovered HA by scanning electron microscopy, energy-dispersive X-ray, X-ray photoelectron spectroscopy, and Fourier transform infrared significantly indicate the existence of identical elements in the recovered HA compared with the previous studies. The higher reduction (around 37%) in ultraviolet (UV) absorbance values (UV254 and UV280) in the final effluent indicates the elimination of aromaticity and conjugated double-bond compounds from leachate. Moreover, 36 and 39% COD and 39 and 44% colour removal exhibit substantial interference.

    Curcuma alismatifolia, is an Asian crop from Zingiberaceae family, popularly used as ornamental plant in floriculture industry of Thailand and Cambodia. Different varieties with a wide range of colors can be found in species. Until now, few breeding programs have been done on this species and most commercially important cultivars are hybrids that are propagated vegetatively. In spite of other flowering plants, there is still lack of transcriptomic-based data on the functions of genes related to flower color in C. alismatifolia. The raw data presented in this article provides information on new original transcriptome data of two cultivars of C. alismatifolia by Illumina Hiseq. 4000 RNA-Seq technology which is the first ever report about this plant. The data is accessible via European Nucleotide Archive (ENA) under project number PRJEB18956.

    A new species of black fly, Prosimulium kazukii, is described based on female, male and pupal specimens collected from central Honshu, Japan. It is placed in the Prosimulium magnum species-group, and is characterized in the female and male by yellow thoraces, and in the pupa by the frons and dorsal surface of the thorax without distinct tubercles. By these characters, it is distinguished from all four related species (P. apoina Ono, P. kalibaense Ono, P. sarurense Ono, and P. yezoense Shiraki) of the same species-group in Japan. The female of this new species was previously known as an aberrant form of P. yezoense.

    Cinnamon deodorised aqueous extract (CinDAE) was prepared and evaluated for its total phenolic (315.3 ± 35.4 mg GAE/g) and flavonoid (99.3 ± 9.6 mg RE/g) contents. Stabilizing efficiency of CinDAE, for chicken meatballs, was measured against oxidative deterioration as function of storage time under chilled conditions.     Physico-chemical and sensory characteristics of frankfurters prepared with three types of palm fats (PF60: 40, PF70: 30 and PF80: 20) and palm olein (POo) at 20 and 25% of fat levels were studied. Incorporation of different fats at 20 and 25% did not affect the cooking yields of the frankfurters. Frankfurters incorporated with 25% POo showed the highest value of water-holding capacity (WHC) among eight formulations. The frankfurters containing POo showed the least cooking loss compared to those with palm fats. The incorporation of different type and level of fats resulted in significant changes in the colour (lightness, redness, yellowness) of frankfurters. Texture profiles of both raw and cooked frankfurters were found to be altered by the blending of different type and level of fats. In raw frankfurters, hardness for frankfurters mixed with palm fats were significantly higher than the one with POo but greater values for cohesiveness was observed in raw frankfurters blended with POo. Lowest chewiness was demonstrated by frankfurters mixed with 20% POo. Grilling increased the hardness values of all frankfurters. Contrary to the raw counterparts, cooked frankfurter with POo was the hardest among all formulations. Cohesiveness and chewiness was also found to be significantly higher for cooked frankfurters mixed with POo. Raw frankfurters with fat content of 25% showed greater value in hardness than those of 20%. However, there were no significant differences (P > 0.05) observed for all the texture profile attributes in cooked frankfurters due to fat levels. In sensory evaluation, frankfurters prepared with POo were found to be most acceptable by consumer panels as they scored the highest for hardness rating, chicken flavour, oiliness and overall acceptance attributes.

    An optical fiber chemical sensor for the determination of free glutamate in food samples was fabricated based on the
    immobilization of 0.1 M copper(II) nitrate trihydrate onto sol-gel glass powder which was then mixed with methyl cellulose
    to form a pellet. A distinctive colour change from light blue to dark blue was observed in the presence of glutamate in
    less than 1 min. The colour change was measured by reflectance spectrophotometer at 691 nm. A linear relationship
    between the reflectance intensity and glutamate concentration was observed in the range of 12.5 to 500 mM with a limit
    of detection of 10.6 mM. This method is also reproducible with a relative standard deviation of less than 5%, no effect on
    pH of the glutamate solution and a good recovery of above 80%. The sensor was used for the determination of glutamate
    in common food items such as soups and flavor enhancers. The results obtained from the fabricated sensor were found
    to be comparable with HPLC method.

    In a range of non-human primate, bird and fish species, the intensity of red coloration in males is associated with social dominance, testosterone levels and mate selection. In humans too, skin redness is associated with health, but it is not known whether--as in non-human species--it is also associated with dominance and links to attractiveness have not been thoroughly investigated. Here we allow female participants to manipulate the CIELab a* value (red-green axis) of skin to maximize the perceived aggression, dominance and attractiveness of photographs of men's faces, and make two findings. First, participants increased a* (increasing redness) to enhance each attribute, suggesting that facial redness is perceived as conveying similar information about a male's qualities in humans as it does in non-human species. Second, there were significant differences between trial types: the highest levels of red were associated with aggression, an intermediate level with dominance, and the least with attractiveness. These differences may reflect a trade-off between the benefits of selecting a healthy, dominant partner and the negative consequences of aggression.

    The objective of this study was to investigate the performance of employing Fenton's reagent in the advanced oxidation of ozone to treat stabilized landfill leachate in an ozone reactor. A central composite design (CCD) with response surface methodology (RSM) was applied to evaluate the relationships between operating variables, such as ozone and Fenton dosage, pH, and reaction time, to identify the optimum operating conditions. Quadratic models for the following four responses proved to be significant with very low probabilities (<0.0001): chemical oxygen demand (COD), color, NH-N, and ozone consumption (OC). The obtained optimum conditions included a reaction time of 90 min, 30 g/m³ ozone, 0.01 mol/L₂H₂O,0.02 mol/L Fe²⁺, and pH 5. COD, color, and NH₃-N removal rates of 79%, 100%, and 20%, respectively, and 0.18 kg O₃/kg COD OC were obtained. The predictions correspond well with experimental results (COD, color, and NH-N removal rates of 78%, 98.5%, and 19%, respectively, and 0.29 kg O₃/kg COD OC). This method reduces the treatment time and improves the treatment efficiency relative to a previously published method that used Fenton's reagent prior to ozonation.

    Hibiscus rosa sinensis, a member of the Malvaceae family, is widely cultivated in the tropics as an ornamental plant. It is often planted as a fence or hedge plant, and has several forms of flowers with varying colours. It is also used in traditional medicine to induce abortion, ease menstrual cramps, assist in childbirth and relieve headache, fever and inflammation. In this study, we evaluated the antibacterial activity of H. rosa sinesis extract using a disc diffusion method. Crude petroleum ether extract, ethyl acetate extract and methanol extract from the leaves, stems and flowers of the plant were prepared using a cold extraction technique. These extracts were tested at concentrations ranging from 4 mg/disc to 0.017 mg/disc against methicillin-resistant Staphylococcus aureus (MRSA), Staphylococcus aureus, Escherichia coli, Pseudomonas aeruginosa and Klebsiella pneumonia. The petroleum ether extract from the leaves, stems and flowers and methanol extract from the leaves showed inhibition zones with diameters > 12 mm against MRSA. Overall, the petroleum ether extract from flowers at concentrations of 4 mg/disc and 2 mg/disc displayed the strongest inhibition zones of 18.6 ± 2.85 mm and 18.5 ± 0.29 mm, respectively, as compared to vancomycin (30 μg/ml), which did not differ significantly from the 18.0 ± 0.10 mm size of the vancomycin (30 μg/ml) inhibition zone (p < 0.05). In conclusion, H. rosa sinensis extract is a potential antibacterial agent for treating MRSA infection.

    Sponge cake prepared by partial substitution of wheat flour with mango pulp and mango peel flours (MPuF and MPeF, respectively) at different concentrations (control, 5%, 10%, 20% or 30%) were investigated for the physico-chemical, nutritional and organoleptic characteristics. Results showed sponge cake incorporated with MPuF and MPeF to have high dietary fiber with low fat, calorie, hydrolysis and predicted glycemic index compared with the control. Increasing the levels of MPuF and MPeF in sponge cake had significant impact on the volume, firmness and color. Sensory evaluation showed sponge cake formulated with 10% MPuF and 10% MPeF to be the most acceptable. MPeF and MPuF have high potential as fiber-rich ingredients and can be utilized in the preparation of cake and other bakery products to improve the nutritional qualities.
