    5-Hydroxymethylfurfural (HMF) is formed during heat treatment of carbohydrate-containing foods, especially in a deep-fat frying process. This study aimed to investigate the effect of amino acids on the formation and reduction of HMF from glucose, fructose and sucrose at frying temperature in model systems containing binary mixtures of an amino acid and a sugar in equal concentrations (0.3M). The results revealed that the formation of HMF from sugars accelerated in the presence of acidic amino acids (i.e. glutamic and aspartic acids). Conversely, the presence of basic amino acids (i.e. lysine, arginine and histidine) led to reduced concentrations of HMF to non-detectable levels in model systems. The results showed that both pH and heating time significantly affected the formation of HMF from fructose in the presence of glutamic acid. In this regard, a higher amount of HMF was formed at lower pH.

    Currently, bee-gathered pollen (bee pollen) is commonly used worldwide as a dietary supplement and is recognized for its curative properties. Floral pollen is also important but is less recognized due to a lack of investigation. This study aims to determine the morphological characteristics and nutritional and phytochemical properties of floral maize pollen. Fresh pollen grains harvested from a farm of maize plants are yellow in colour and spheroid in shape. They change to amber and indented prismatic solid shapes when dehydrated. The main composition of floral maize pollen is carbohydrates (44.30±3.73%), followed by moisture (23.38±5.73%), crude proteins (17.16±3.13%), crude fibres (9.56±0.92%), and ash (4.98±0.11%), while the lowest content is observed for crude fats (0.62±0.06%). The predominant mineral is potassium (768.50±11.40 mg 100 g-1), followed by sodium (695.10±9.70 mg 100 g-1), calcium (147.20±12.60 mg 100 g-1), and magnesium (97.30±2.9 mg 100 g-1). The microelements (with average values) consist of iron (49.50±3.30 mg 100 g-1) and zinc (30.00±3.70 mg 100 g-1). Excellent phytochemical properties add value to floral maize pollen. Maize pollen contains a high total phenolic content (TPC) and total flavonoid content (TFC) of 783.02 mg GAE 100 g-1 and 1706.83 mg QE 100 g-1, respectively, and possesses strong antioxidant activity of 10.54 mg mL-1. Maize floral pollen and derived products can serve as future food resources for human consumption and as a source of functional and bioactive compounds in nutraceutical and pharmaceutical industries.

    PURPOSE: To examine the effect of carbohydrate (CHO) mouth rinsing on endurance running responses and performance in dehydrated individuals.

    METHODS: In a double blind, randomised crossover design, 12 well-trained male runners completed 4 running time to exhaustion (TTE) trials at a speed equivalent to 70% of VO2peak in a thermoneutral condition. Throughout each run, participants mouth rinsed and expectorated every 15 min either 25 mL of 6% CHO or a placebo (PLA) solution for 10 s. The four TTEs consisted of two trials in the euhydrated (EU-CHO and EU-PLA) and two trials in the dehydrated (DY-CHO and DY-PLA) state. Prior to each TTE run, participants were dehydrated via exercise and allowed a passive rest period during which they were fed and either rehydrated equivalent to their body mass deficit (i.e., EU trials) or ingested only 50 mL of water (DY trials).

    RESULTS: CHO mouth rinsing significantly improved TTE performance in the DY compared to the EU trials (78.2 ± 4.3 vs. 76.9 ± 3.8 min, P = 0.02). The arousal level of the runners was significantly higher in the DY compared to the EU trials (P = 0.02). There was no significant difference among trials in heart rate, plasma glucose and lactate, and psychological measures.

    CONCLUSIONS: CHO mouth rinsing enhanced running performance significantly more when participants were dehydrated vs. euhydrated due to the greater sensitivity of oral receptors related to thirst and central mediated activation. These results show that level of dehydration alters the effect of brain perception with presence of CHO.

    BACKGROUND: Acid changes in gastroesophageal reflux with vary component in the food have less been studied, especially carbohydrate. We plan to clarify the effect of different carbohydrate density on low esophageal acid and reflux symptoms of patients with gastroesophgeal reflux disease.

    METHODS: Twelve patients (52 ± 12 years old; five female) with gastroesophageal reflux disease were recruited for the prospective crossover study. Each patient was invited for panendoscope, manometry and 24 h pH monitor. The two formulated liquid meal, test meal A: 500 ml liquid meal (containing 84.8 g carbohydrate) and B: same volume liquid meal (but 178.8 g carbohydrate) were randomized supplied as lunch or dinner. Reflux symptoms were recorded.

    RESULTS: There are significant statistic differences in more Johnson-DeMeester score (p = 0.019), total reflux time (%) (p = 0.028), number of reflux periods (p = 0.026) and longest reflux (p = 0.015) after high carbohydrate diet than low carbohydrate. Total reflux time and number of long reflux periods more than 5 min are significant more after high carbohydrate diet.

    CONCLUSION: More acid reflux symptoms are found after high carbohydrate diet. High carbohydrate diet could induce more acid reflux in low esophagus and more reflux symptoms in patients with gastroesophageal reflux disease.

    During the production of palm sugar, the palm sap (Arenga pinnata) is heated up to 150 degrees C. Besides the hydrolysis of carbohydrate to generate reducing sugars and degradation of amino acid, many physicochemical changes produced at all these temperatures, having a significant impact on the overall quality of palm sugar. In this study, changes in physico-chemical properties of the palm sap due to heat processing were investigated. Analysis of colour, soluble solid, pH, temperature, sugar and amino acid concentration was determinant. The results showed clearly that the heating process at these high temperatures was necessary to create an environment which was rich in essential precursors for subsequent reactions such as Maillard reaction. Chemical compounds that showed drastic changes in concentration were polar side chain amino acids especially glutamine, asparagine and arginine as well as sucrose and pH value. Other quality characteristics of palm sugar based on colour and soluble solids (Brix) shared an increase in concentration as a function of time.

    We investigated the histology and carbohydrate content of the parotid and mandibular glands of the barking deer (Muntiacus muntjak). Three adult males were used. Paraffin wax sections of the glands were stained with haematoxylin and eosin (HE), alcian blue (AB), pH 2.5 and periodic acid Schiff (PAS). The acinar cells of the parotid gland were serous, whereas those of the mandibular gland were of the mixed type. The acini of the mandibular gland comprised serous and mucous cells with the mucous type predominating. AB and PAS staining showed high concentrations of acidic and neutral carbohydrates in the mucous cells, but not in the serous cells of the mandibular gland. These carbohydrates were also found in moderate-to-high concentrations in the secreted material in the mandibular duct lumen. However, these carbohydrates were not found in acinar cells of the parotid gland or in the serous cells of the mandibular gland. Thus, carbohydrates in the saliva of the barking deer appear to be produced mainly by the mucous cells of the mandibular glands.

    The objective of the present study was to measure the glycemic index of durian, papaya, pineapple and water-melon grown in Malaysia. Ten (10) healthy volunteers (5 females, 5 males; body mass index 21.18+/-1.7 kg/m2) consumed 50 g of available carbohydrate portions of glucose (reference food) and four test foods (durian, papaya, pineapple and watermelon) in random order after an overnight fast. Glucose was tested on three separate occasions, and the test foods were each tested once. Postprandial plasma glucose was measured at intervals for two hours after intake of the test foods. Incremental areas under the curve were calculated, and the glycemic index was determined by expressing the area under the curve after the test foods as a percentage of the mean area under the curve after glucose. The results showed that the area under the curve after pineapple, 232+/-24 mmolxmin/L, was significantly greater than those after papaya, 147+/-14, watermelon, 139+/-8, and durian, 124+/-13 mmolxmin/L (p<0.05). Similarly, the glycemic index of pineapple, 82+/-4, was significantly greater than those of papaya, 58+/-6, watermelon, 55+/-3, and durian, 49+/-5 (p<0.05). The differences in area under the curve and glycemic index among papaya, watermelon and durian were not statistically significant. We conclude that pineapple has a high glycemic index, whereas papaya is intermediate and watermelon and durian are low glycemic index foods. The validity of these results depends on the accuracy of the data in the food tables upon which the portion sizes tested were based.

    We investigated the effects of four iso-nitrogenous (40% crude protein) and iso-caloric (17.6 kJ g(-1)) diets with different dietary carbohydrate levels (15%, 20%, 25% and 30%) on the growth performance, feed utilization efficiency, body composition and liver histology of Malaysian mahseer (Tor tambroides) fingerlings in a 10-week feeding trial. Fish (initial weight of 0.8?0.1 g; initial total length 4.2?0.1 cm) were fed twice daily at 4% body mass. Dietary carbohydrate level had significant effects (P<0.05) on weight gain, SGR (specific growth rate), FCR (feed conversion rate), PER (protein efficiency rate), survival percentage and all nutrient retention values (PRV, LRV, CRV, ERV). Protein, carbohydrate and gross energy composition of the fish body were also significantly differed (P<0.05) among treatments. Liver histology showed mild hepatic steatosis and hypertrophy for fishes receiving a higher dietary carbohydrate inclusion. In general, treatments with 20% and 25% dietary carbohydrate levels produced better growth results compared to the rest of the treatments. Using a second-order polynomial regression analysis model, the optimal dietary carbohydrate level of 23.4% was estimated for mahseer fingerlings. ?

    This study aimed to investigate the bone quality in rats induced with metabolic syndrome (MetS) using high-carbohydrate high-fat (HCHF) diet. Male Wistar rats (n = 14) were randomized into two groups. The normal group was given standard rat chow. The MetS group was given HCHF diet. Diet regimen was assigned for a period of 20 weeks. Metabolic syndrome parameters were measured monthly until MetS was established. Left tibiae were scanned using micro-computed tomography at week 0, 8, 12, 16, and 20 to analyze the trabecular and cortical bone structure. At the end of the study, rats were euthanized and their bones were harvested for analysis. Metabolic syndrome was established at week 12 in the HCHF rats.     BACKGROUND: A natural carbohydrate biopolymer was extracted from the agricultural biomass waste (durian seed). Subsequently, the crude biopolymer was purified by using the saturated barium hydroxide to minimize the impurities. Finally, the effect of different drying techniques on the flow characteristics and functional properties of the purified biopolymer was investigated. The present study elucidated the main functional characteristics such as flow characteristics, water- and oil-holding capacity, solubility, and foaming capacity.

    RESULTS: In most cases except for oven drying, the bulk density decreased, thus increasing the porosity. This might be attributed to the increase in the inter-particle voids of smaller sized particles with larger contact surface areas per unit volume. The current study revealed that oven-dried gum and freeze-dried gum had the highest and lowest compressibility index, thus indicating the weakest and strongest flowability among all samples. In the present work, the freeze-dried gum showed the lowest angle of repose, bulk, tapped and true density. This indicates the highest porosity degree of freeze dried gum among dried seed gums. It also exhibited the highest solubility, and foaming capacity thus providing the most desirable functional properties and flow characteristics among all drying techniques.

    CONCLUSION: The present study revealed that freeze drying among all drying techniques provided the most desirable functional properties and flow characteristics for durian seed gum.

    The increase in wastes generated from jackfruit seeds has been largely under-utilized in Malaysia. Due to the high nutritional and medicinal content embedded in the cellulosic structure of jackfruit wastes, a need then arises for their physicochemical elucidations. In this study, the extraction of Artocarpus heterophyllus seed was carefully investigated using Taguchi orthogonal optimization design. Complete functional group characteristics and chemical profile of the A. heterophyllus seed extracts were obtained using different physicochemical characterization. The optimal conditions of the microwave extraction parameters were determined at 5 min of irradiation time, 450 W of power and 50 °C of temperature. Under this condition, the optimal yield of 17.34 (mg/g) % was achieved at an SNR ratio of 24.78. The mass spectrometry analysis tentatively identified a total of 90 and 148 secondary metabolites at positive and negative ESI modes, respectively. The chemical profile obtained provided a baseline reference for further investigation on the food and medicinal bioactive from Artocarpus heterophyllus seed oleoresins. The FT-infrared emission spectrum shows the presence of some specific carbohydrates and amide protein functional groups directly linked to C-O (1008 cm-1) the carbonyl (C=O) groups, respectively. Moreover, the morphological characteristics of the jackfruit raw and crude extracts conspicuously revealed large-sized globules which suggest the carbohydrates and protein contents. The result of this study indicates that the use of microwave extraction technology produced high-quality extracts with lower degradation of the thermal labile constituents. This will assist in determining the suitable conditions necessary for the total recovery of medicinal and nutritional constituents and conversion of agricultural waste products into useful products.

    Ethylene glycol in the presence of sodium hydroxide was utilised as pretreatment for effective delignification and reduced the recalcitrance of lignocellulosic biomass which ramified the exposure of cellulose. Two-staged acid hydrolysis was also investigated which demonstrated its synergistic efficiency by minimising the deficiency of single stage acid hydrolysis. The operating parameters including acid concentration, temperature, residence time and cellulose loading for two-staged acid hydrolysis were studied by using ethylene glycol delignified degraded oil palm empty fruit bunch (DEFB) to recover the sugar based substrates for potential biofuels and other bio-chemicals production. In this study, stage I 45 wt% acid at 65 °C for 30 min coupled with high cellulose loading 21.25 w/v% and 12 wt% acid at 100 °C for 120 min was able to release a total of 89.8% optimum sugar yield with minimal formation of degradation products including 0.058 g/L furfural, 0.0251 g/L hydroxymethylfurfural and 0.200 g/L phenolic compounds.

    he deficiency of oxygen in water during submergence is one of the frequently perceived environmental factors that limits

    the rise of water level in natural location. This characteristic helps the plant to deal with flooding stress. The mechanism
    on flooding tolerance and adaptation mostly includes the physiological changes, one of which is the shortened growth
    of elongation towards keeping the carbohydrates and energy for production of the antioxidant regulations in rice plants.
    Furthermore, molecular studies and gene cloning might help suggest a better understanding of means and adaptations
    built-up by rice plants in order to stay alive and to remain active during flooding stress, might help to focus on some
    novel approaches to the up gradation as well as improvement on the natural cultivation of rice plants.

    Cellulases have been vital for the saccharification of lignocellulosic biomass into reduced sugars to produce biofuels and other essential biochemicals. However, the sugar yields achievable for canonical cellulases (i.e. endoglucanases, exoglucanases and β-glucosidases) have not been convincing in support of the highly acclaimed prospects and end-uses heralded. The persistent pursuit of the biochemical industry to obtain high quantities of useful chemicals from lignocellulosic biomass has resulted in the supplementation of cellulose-degrading enzymes with other biological complementation. Also, chemical additives (e.g. salts, surfactants and chelating agents) have been employed to enhance the stability and improve the binding and overall functionality of cellulases to increase product titre. Herein, we report the roadmap of cellulase-additive supplementations and the associated yield performances.

    This article describes attenuation and absorption measurements using the microstrip transmission line technique connected with a microwave vector network analyzer (Agilent 8750B). The magnitudes of the reflection (S11) and transmission (S21) coefficients obtained from the microstrip transmission line were used to determine the attenuation and absorption of oil palm empty fruit bunch/polylactic acid (OPEFB/PLA) composites in a frequency range between 0.20 GHz and 12 GHz at room temperature. The main structure of semi-flexible substrates (OPEFF/PLA) was fabricated using different fiber loading content extracted from oil palm empty fruit bunch (OPEFB) trees hosted in polylactic acid (PLA) using the Brabender blending machine, which ensured mixture homogeneity. The commercial software package, Computer Simulation Technology Microwave Studio (CSTMWS), was used to investigate the microstrip line technique performance by simulating and determine the S11 and S21 for microwave substrate materials. Results showed that the materials' transmission, reflection, attenuation, and absorption properties could be controlled by changing the percentage of OPEFB filler in the composites. The highest absorption loss was calculated for the highest percentage of filler (70%) OPEFB at 12 GHz to be 0.763 dB, while the lowest absorption loss was calculated for the lowest percentage of filler 30% OPEFB at 12 GHz to be 0.407 dB. Finally, the simulated and measured results were in excellent agreement, but the environmental conditions slightly altered the results. From the results it is observed that the value of the dielectric constant (εr') and loss factor (εr″) is higher for the OPEFB/PLA composites with a higher content of OPEFB filler. The dielectric constant increased from 2.746 dB to 3.486 dB, while the loss factor increased from 0.090 dB to 0.5941 dB at the highest percentage of 70% OPEFB filler. The dielectric properties obtained from the open-ended coaxial probe were required as input to FEM to calculate the S11 and S21 of the samples.

    In this study, a selected γ-aminobutyric acid (GABA)-rich Malaysian strain Aspergillus oryzae NSK was collected from soy sauce koji. The strain was used to explore the effect of using renewable native sugar syrup, sugarcane, nipa, and molasses as fermentable substrates for developing a novel functional GABA soy sauce. We evaluated the strain using the chosen native sugars for 7 days using shake flask fermentation at 30 °C. The results showed optimum GABA concentration was achieved using cane molasses as the fermentable substrate (354.08 mg/L), followed by sugarcane syrup (320.7 mg/L) and nipa syrup (232.07 mg/L). Cane molasses was subsequently utilized as a substrate to determine the most suitable concentration for A. oryzae NSK to enhance GABA production and was determined as 50% g/L of glucose standard cane molasses. Our findings indicate that cane molasses can be used as a GABA-rich ingredient to develop a new starter culture for A. oryzae NSK soy sauce production.

    Many algae are rich sources of sulfated polysaccharides with biological activities. The physicochemical/rheological properties and biological activities of sulfated polysaccharides are affected by the pattern and number of sulfate moieties. Sulfation of carbohydrates is catalyzed by carbohydrate sulfotransferases (CHSTs) while modification of sulfate moieties on sulfated polysaccharides was presumably catalyzed by sulfatases including formylglycine-dependent sulfatases (FGly-SULFs). Post-translationally modification of Cys to FGly in FGly-SULFs by sulfatase modifiying factors (SUMFs) is necessary for the activity of this enzyme. The aims of this study are to mine for sequences encoding algal CHSTs, FGly-SULFs and putative SUMFs from the fully sequenced algal genomes and to infer their phylogenetic relationships to their well characterized counterparts from other organisms. Algal sequences encoding CHSTs, FGly-SULFs, SUMFs, and SUMF-like proteins were successfully identified from green and brown algae. However, red algal FGly-SULFs and SUMFs were not identified. In addition, a group of SUMF-like sequences with different gene structure and possibly different functions were identified for green, brown and red algae. The phylogeny of these putative genes contributes to the corpus of knowledge of an unexplored area. The analyses of these putative genes contribute toward future production of existing and new sulfated carbohydrate polymers through enzymatic synthesis and metabolic engineering.

    Membrane distillation (MD) frequently deals with membrane biofouling caused by deposition of algal organic matter (AOM) from algal blooms, hampering the treatment efficiency. In this study, AOMs, which are soluble extracellular polymeric substance (sEPS), bounded EPS (bEPS), and internal organic matter (IOM) from three benthic species (Amphora coffeaeformis, Cylindrotheca fusiformis, and Navicula incerta) were exposed to a temperature range to resemble the MD process. Results showed that EPS had higher polysaccharide fraction than protein with 85.71%, 68.26%, and 71.91% for A. coffeaeformis, N. incerta, and C. fusiformis, respectively. Both the EPS polysaccharide and protein concentration linearly increase with temperature, but the opposite was true for IOM and high-molecular-weight (HMW) polysaccharide. At 80°C, 5812.94 μg/g out of 6304.28 μg/g polysaccharide in A. coffeaeformis was of low molecular weight (LMW); hence, these findings suggested that they were the major foulants to clog the narrow pores within virgin hydrophobic membrane, forming a conditioning layer followed by deposition of HMW and hydrophilic polysaccharides onto the macropores to cause irreversible fouling. Cell lysis occurring at higher temperature increases the total protein content about 25% within the EPS matrix, inducing membrane plugging via hydrophobic-hydrophobic interactions. Overall, the AOM composition at different temperatures will likely dictate the fouling severity in MD. PRACTITIONER POINTS: EPS production of three benthic diatoms was the highest at 80°C. EPS from diatoms consists of at least 75.29% of polysaccharides. Small molecular weight carbohydrates (<12 kDa) were potential foulants. Proteins of internal organic matter (>56%) give irreversible attachment towards membranes. A. coffeaeformis was considered as the most fouling diatoms with highest EPS amount of 6304.28 μg/g.

    Mango is one of the popular fruits in Malaysia and has been used in the jam, puree and drinks production. Production of food products using mango pulp has generated by-products such as peel and kernel. Disposal of these by-products will cause environmental pollution if not properly treated. Mango peel contains high nutritional composition and antioxidant properties and can be utilised as food ingredients. The objectives of this study are to determine the nutritional composition and antioxidant properties of the peels of two selected mango varieties, namely Golden Lily and Chokanan. Analysis of proximate composition, minerals, total phenolic compounds, carotenoids, and antioxidant activity (DPPH and ABTS) were carried out in this study. Results of the proximate analysis showed that the peels of both mango varieties were a good source of fibre, which were 14.45% for Golden Lily and 14.89% for Chokanan. The crude fat, crude protein, and total carbohydrate of Chokanan peel (2.62%, 4.67% and 57.74%, respectively) were higher than the Golden Lily peel (1.13%, 2.90% and 53.16%, respectively). Contrastingly, the moisture content of the Golden Lily peel (24.67%) was higher than the Chokanan peel (16.61%). Potassium was the main mineral found in both Golden Lily and Chokanan mango peels (8802.10 mg/kg and 8443.60 mg/kg, respectively). The total phenolic compounds in the peels of both mango varieties were not significantly different. The Chokanan peel contained a higher carotenoids content (35.26 µg/g) than the Golden Lily peel (15.03 µg/g). The ABTS value for Chokanan peel was higher (1406.00 μmol TE/g) than Golden Lily peel (1314.00 μmol TE/g). This study showed that Chokanan and Golden Lily mango peels have the potential to be utilised as ingredient in food products due to their high fibre content.
